Has anybody made this recipe from Nigella Express?

The sweetcorn chowder with tortilla chips

I fancy it but not sure if it sounds a bit bland. Has anybody made it, and what's the verdict?

I think I had. I can't remember what it tasted like but we haven't repeated it. So it can't be amazing!

JamNan · 08/09/2014 09:10

That sounds nice. It just so happens I have some leftover sweetcorn and peppers in the fridge. Grin

RemusLupinsBiggestGroupie · 08/09/2014 18:04

Thanks, both. I think I might give it a try but add lots more flavouring to it - chilli, paprika, maybe some thyme. Might google other versions and do a kind of bastardised recipe of my own.

We top it with sour cream, grated cheese and slice spring onion. It makes it more of a meal. DH puts lots if hot sauce on top too. It is even better after freezing.

CSLewis · 15/09/2014 20:03

Yup, I've made it. Super quick and easy, and was very popular with the children - probably because it was fairly sweet.

Yes, not the most flavourful soup in the world, but the tortilla chip topping does add a bit of contrasting texture.

If I were cooking it just for me, I'd probably try adding some sliced red chilli.

impatienceisavirtue · 15/09/2014 20:12

I haven't, but every other recipe I've made from that book has been devoured by the kids in a heartbeat so it's generally a safe bet

Hassled · 15/09/2014 20:13

I haven't, but I have made loads of other dishes from that book - it's the most consistently good book of hers, I reckon.

LairyPoppins · 15/09/2014 20:17

Yes is yum and even better with extra chilli.

RemusLupinsBiggestGroupie · 16/09/2014 20:31

I'd forgotten about this. :) Thanks, all.

I'm going to try it but really ramp up the spicing on it.

What else do people like from the book? I do a version of the blackberry crisp quite a lot, but don't think I've tried anything else.

The poussin recipe with roast sweet potato is amazing. I hate cinnamon but it's delicious mixed in with the sweet potato. Adds a really lovely flavour that I would never have thought of.

I've made the croissant pudding thing which was vile. The texture was like soggy bread.

That's the only Nigella recipe I've ever disliked.

RemusLupinsBiggestGroupie · 17/09/2014 16:58

Thanks, Betty. If I can train myself to eat chicken (whole other thread!) I might try that.

A shame about the pudding, as it does look nice (although very unhealthy!).

You could always make the sweet potatoes alongside whatever meat you do it. They're really delicious.

BettyFocker · 17/09/2014 17:23

Do eat* that should say.

RemusLupinsBiggestGroupie · 17/09/2014 17:36

I don't currently eat any meat! :)

BettyFocker · 17/09/2014 18:18

Oh, my mistake!

RemusLupinsBiggestGroupie · 17/09/2014 19:45

No, it was my fault.

Thanks for the tip. I really like sweet potatoes.

I've done a few from this book but only one's become a 'regular', that's the spaghetti with prawns, chilli & tomato, quick, healthy & tasty midweek meal that I tend to think of if I have a leftover 1/2 bag of leaves, some cherry toms & white wine hanging about.

Whitershadeofpale · 20/09/2014 17:50

I really like express and the soup is nice (I added chille). Tonight we're treating ourselves and having the chocolate, peanut sundae. That sauce is amazing.

RemusLupinsBiggestGroupie · 20/09/2014 18:03

Thanks, both. I don't eat prawns so can't do that one but may well try the sundae sauce at some point. :)

Do you eat fish? The mirin salmon is quick, but also tastes great.

RemusLupinsBiggestGroupie · 20/09/2014 18:31

Red - am not fond of fish but am trying to wean myself onto it. It does look nice.

These are some of the recipes that have gone down well here:

Steak slice with Lemon and Thyme (P40)

Banana and Butterscotch Muffins (P262) the butterscotch chips you have to either buy if you're in the US, or buy online (expensive), or substitute ordinary chocolate or white choc chips - equally popular with my lot)

Scallops and Chorizo (p153)

Instant Chocolate Mousse (p159) but I use 150g milk choc and 100g dark, instead of all dark, otherwise it is too strong

Goujons of Sole (p73)

Buttermilk Roast Chicken (p274) This is REALLY popular here!

Mustard Pork Chops (p11)

RedKites · 20/09/2014 19:26

We have the mellow meatballs like in the recipe, but I suspect you could do them without the actual meatballs (maybe upping the chickpeas) and it'd still be delicious.

EvansOvalPiesYumYum · 22/09/2014 16:16

Sorry Remus - just noticed you don't eat meat, so most of my suggestions will be totally useless! Blush

RemusLupinsBiggestGroupie · 22/09/2014 18:35

My fault - no need to apologise! :)

I'm deffo going to try the soup soon, and the sweet potatoes, and maybe the chicken (as I toying with the idea of eating it again - see my other thread!).
