Money is a bit tight at the moment so am looking for cheap tried and tested recipe ideas that will satisfy DH and two fussy DC. DS2 has CMPA (cows milk allergy) though so recipes need to take this into consideration. Although we are able to use his alternative milk but dairy free cheese is pretty rubbish so would rather avoid that if possible. Today I have some corn on the cobs that need using up so if anyone could recommend a recipe that can incorporate those or as a side dish that would be great. Grin

enchiladas
fry a finely chopped red onion and pepper in some oil until beginning to soften, add in turkey mince
(approximately 100g per person) and cook until done (around 8-10minutes). Add some frozen peas or
sweetcorn and cook for 2 minutes more. Spoon in 2 heaped tbsp red pesto and 1tbsp tomato puree. You
can add 25g grated cheese if liked here (we don't as DH hates cheese). Spoon into tortillas and roll up.
Slice in half and put into baking tin. Top with HM tomato sauce and/or grated cheese. Bake until golden
on top at 180degrees (approx 10-15mins).

meatballs
finely chop 1 onion, grate a peeled apple, crush a clove of garlic, crumble a chicken stock cube and add
to a bowl with 500g lean beef mince (or mixture of beef and pork mince) and 2 tbsp tomato puree. Use
your fingers to combine ingredients and then roll into small balls. Coat with flour and fry in a large pan
until all sides are brown and they are cooked through (approx 15mins). Serve with HM tomato sauce
and pasta (in our house it's crusty bread as DH hates pasta).

Cous cous with Roasted Veg & Pesto
1 aubergine diced
1 red pepper seeded and sliced
1 red onion thickly sliced
2 small courgettes thinly sliced
2 crushed garlic cloves
2tbsp olive oil
Salt & pepper
100g cous cous
100ml hpt veg stock
4tbsp pesto
Mix veg and garlic with the oil in a bowl, season and tip into large roasting tin.
Roast in oven preheated to 200c/fan 180 for 20-30mins.
Put cous cous in jug or bowl and pour over hot stock. Cover for 5mins until liquid has been absorbed.
Add roast veg to cous cous and stir in the pesto. Fry in some olive oil to serve hot.

These sound good, I'll try the enchiladas Smile

We have chilli con carne with boiled rice, cottage pie, spaghetti bookings, chicken stir fry, roast pork shoulder cooked in the slow cooker, gammon cooked in the slow cooker.

Yes Drummerswife spag Bol and chilli are made quite regularly at ours too. Not thought of doing gammon in the slow cooker though so will have to give that a try. Love my slow cooker!! Wink

I've tried this one it is so easy, healthy, quick and not too expensive to prepare.

Burger patty is consist of ground meat usually beef or pork mixed with eggs, minced onions, breadcrumbs, Worcestershire sauce, salt and pepper. Flattened the mixture into a disc-like shape then fried or grilled until tender.

Estimated time of preparation and cooking: 30-40 minutes(plus refrigerating time)

Ingredients:
500 grams ground beef
1 egg
2 tablespoons water
1/4 cup bread crumbs
4 cloves garlic, minced
1 small onion, grated
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper

Procedures:
Part 1

  1. In a bowl, combine ground beef, egg, garlic, onion, breadcrumbs, Worcestershire, salt and pepper. Mix thoroughly.
  2. Divide the mixture into serving pieces. Roll the mixture into balls and flatten into 1/2 inch on an even surface.
  3. In a tray with grease-proof paper, arrange patties then cover with plastic. Place in the fridge for at least 30 minutes.

Part 2

  1. Fry or grill patties for 3-4 minutes each side or until color turn to brown.
  2. Serve with mushroom gravy or with buns together with sliced tomato, lettuce, cucumber and onion rings.

Cold Weather Hotpot

This is a good one that uses beef mince, potatoes, onions, carrots and baked beans. Great with crusty bread on the side.
