Gluten free biscuits and cakes

I suffer with IBS and wheat seems to aggravate the problem, so I'm trying to mainly eliminate wheat from my diet. I've bought gluten free flour, but don't like the texture of it in cake or biscuits.

does anyone have a good recipe for gluten free biscuits, maybe with oats/ground almonds..? Also a good cake recipe? I often make flapjacks, but could do with something else.

Thanks.

www.elanaspantry.com

I've found some nice recipes on here, she uses a lot of almond flour and coconut flour

The paleo shepherds pie is lovely too but I use butternut squash for the topping rather than cauliflower

Thanks Smile I have tried using coconut flour, but found everything just tasted of coconut!

Yes it can be over powering. Never make scrambled egg using coconut oil it is not a winning combination!

For a small amount of sponge (eg little buns or trifle sponge) I've had success with ordinary cornflour. It isn't strong enough for big bakes, where I'd use Dove's Farm which seems very good.

I recently made a cheesecake using Morrison's own free from digestives, which the intended recipient raved about. That was the Hummingbird Bakery chocolate cheesecake, for reference. Base is biscuits, cocoa, butter. Straight substitute. I found it a bit dry as a base but it had been literally years since she'd had cheesecake so she had less to compare.

Doves Farm flours and recipes always work well for me. But I don't often bother now.

"Treats" have stopped being cakes and biscuits for us, even though there are some OK shop-bought gluten-free ones out there.

Instead we have yogurt, fruit, muller rice, rice pudding with jam, ice cream, ice lollies (esp Del Monte smoothie lollies), chocolate, Eton mess, banana split, jelly, trifle (no sponge), pavlova, pepparami (not technically a treat but good as a fast snack).
