Fridge Raiders - can I make them at home, only nicer, cheaper and possibly healthier?

My children love these but they are really expensive for what they are. My son is not keen on bread so for part of his school packed lunch I'd like to make some chicken pieces.

Can anyone suggest how I could make my own, I've tried oven baking chicken breasts with tikka spices and cutting into little pieces but they are not convinced...Hmm

I've only seen these on the telly adverts, so not crystal clear on what they are exactly, but what about some kind of meatball made with chicken mince and spices etc? I love cold meatballs although they are usually pork I think... Usually stays a bit more juicy than a single piece of meat.

chicken or turkey mince, mixed with some spices and herbs, fried onion, then shaped and cooked. cold in lunch boxes.

these sound quite tasty, just cook until cooked through and don't make the tomato sauce?

Maybe that's where I've been going wrong, I've been trying with whole chicken rather than chicken/turkey/pork mince.

I have made beef and pork meatballs with sauce as a hot meal in the past but didn't think of serving mini ones cold. Could be on to a winner thanks!

I make chicken meatballs that are

Chicken mince
An apple
An onion
Breadcrumbs
An egg

Rolled in flour then fried. They are delicious. We eat them cold.

If I were to make these, how long could I keep them in the fridge, using a few per day? And do you think they would freeze well once cooked?

I would think you could keep them in the fridge for a few days, alternatively I'm sure they'd freeze well and you could put them into a pot straight from the freezer in the morning, and they'd defrost by lunchtime. I'd freeze them on a tray with greaseproof paper underneath, then put them into a bag, so they don't all freeze together in a big lump.
