Bomb!

Mix meringue, fruit sauce, fruit pieces and whipped double cream.

Pop in bowl and freeze...

Turn out and pour more fruit sauce on top. Calorific but yum!

Trifles are probably awfully dated but so delicious!

Pannacotta is surprisingly easy and delicious. And impressive. Jamie has a good recipe with rhubarb. Not for veggies though, obviously.

The other super easy/ super delicious/ looks good is pavlova. Delia's meringue recipe is foolproof. Then cover in whipped double cream and loads of berries.

Depending upon the season, I'll do either: chocolate fondants, sticky toffee puddings, pavlova, the obligatory fresh fruit salad, or a lovely one for warm weather - strawberries and mango with a lime syrup sprinkled with fresh mint. (Sometimes, I might do two puds, according to who is coming and what they might like).

If it's very informal, I might do a bread & butter pudding or apple crumble with home-made (or shop-bought)! ice-cream.

Make sure the choc is cool before adding to cream and make more like 6 servings - and I have a large pudding tummy. Tis yummy.

Thanks all, some great ideas here. I am catering for a vegetarian, so pannacotta is out, but everything else is a possibility. Decisions, decisions.....!

I put it in with the winter berries and let it cook down a little.

I also make sure I take it out to mils for after dinner or I will sit and eat the entire lot Blush
