Lovely, easy Slow-Cooked Sausage Casserole with Leeks and Apples

Tried this tonight from a freebie waitrose recipe and it was delicious! Serves 4

2 packs of good quality pork sausages
1 large leek
2 apples (I used Braeburn)
300ml cloudy apple juice
100g smoked bacon lardons (or streaky snipped up small)
olive oil
1 tsp wholegrain mustard

Brown the sausages in the olive oil in a large non stick pan (with tight fitting lid). Put to one side.

Cut the leeks into 6cm chunks then into fine matchsticks. Stir fry with the lardons/bacon until soft.

Put the sausages back in the pan and pour over the apple juice. Bring to the boil and then lower the heat to simmer.

Peel and core the apples and chop into chunks - add to the pan.

Cover with a tight fitting lid and cook on a low heat for 30 mins or until the liquid has reduced by a third and apples are soft.

Stir in a teaspoon of wholegrain mustard before serving.

Serve with mashed potatoes and a green vegetable.

No reason why not, although you'd have to brown the sausages first otherwise they'd be all insipid

I just did it in a frying pan - very easy!

Just made this - the girls both enjoyed it although dd1 pronounced it "a bit too sweet". Wonder if that's because she boycotted the addition of the mustard.

Will be adding the mustard though when I reheat it for dh and I later.

It is quite sweet, but I love the combination of fruit and meat and have a bit of a sweet tooth. I found the smoked bacon and mustard did take the edge off the sweetness though

'Twas yum!

Even dh, who isn't actually that keen on sausages, enjoyed it.
