Crack three eggs.
Whisk and add a bit of grated cheese.

Put a cereal spoon of butter in a hot frying pan,and when it starts to sizzle,add the egg mixture.
Move pan so uncooked bits go around the edges (use a spatula to lift a little too.)
hen getting firm,flip over completely (which is tricky) or just flip one half over the other so it is folded.

Or,pop it under a hot grill to firm up.

I cook once side in the pan and then rather than flip i put in under the grill - turns out better that way for me

Or you could just do the eggs as moondog describes (though I use a flat-ended wooden spoon or wooden spatula to draw the cooked edge towards the handle of the pan, while tilting the pan so that the uncooked stuff runs onto the pan), then, when there's no more runny stuff but the top hasn't dried out, sprinkle the grated cheese onto the omelette and use the spatula to fold the half further away from the pan handle over onto the rest of the omelette. That way it slides out of the pan veyr easily and the cheese melts in the residual heat of the omelette and you get a lovely soft almost custardy inside. I don't liek omelettes finished off under the grill as they have rubbery texture that way.

Though if your dh wants one for healthy eating, replace cheese with sliced or roughly chopped fresh tomatoes.

I think PC's way is best.
Apparently all top chefs add their filling after eggs mostly cooked like this.

whatever you put in your omelette I find it easiest to

cook bottom in frying pan

then slam under a grill to cook the top

ok for 2 of you

4 eggs add a splash of milk and a splash of wocestershire sauce ... beat and put to one side

fry whatever you want to put in it .. onion and mixed peppers is nice .. so is onion and pre-cooked potato chunks .. so is mushroom .. whatever you fancy (if you just want a cheese omelette don't do this bit)

once cooked through .. pour on the eggs and leave for a couple of minutes to cook ..

gently try to pry the sides away from pan .. if they come away easily its cooked

then optionally sprinkle on cheese

then put under a pre-heated grill for a couple of minutes

takes about 5 minutes in total
