Improving my batch cooking skills

I'm in early pregnancy with dc2. No symptoms as yet but last time was laid up knackered/sick weeks 8-16 and so trying to be prepared!!

My standard attempt at "batch cooking" is to make a meal like spag Bol, then we eat half and I freeze half. Is getting more portions out of it simply a case of buying more ingredients? How do people manage with standard size pans etc? I'm only very good at doing it with bolognase / chilli & fish pie. Can anyone else suggest some good meals to start with?

I do spaghetti bolognese in my slow cooker as it's big and I only freeze the sauce.

I do pie filling, chicken and leek usually and I use frozen pastry on the day I want to eat the pie.

I've quite a big sauté pan which I use a lot and a bigger than average sauce pan for pasta and things. It's worth it though as the time it saves down the line is huge.

I buy meat when on offer and cook a dish with it when I find the time then freeze. For instance today I made some sausage casserole, yesterday was enchiladas (we had some of these tonight) and Thursday soup. I find cooking in batches saves so much time in the long run and means on days when I don't have alot of time dinner is straightforward and on those days I do have more time I get to enjoy the cooking rather than rush it. My freezer now has enchiladas, meatballs, sausage casserole, chicken tikka, steak pie, lasagne (meat and vegetable) and soup of various sorts.

I do spag Bol and chilli too but also do curry and beef stew. Tend to cook them on the day I buy the food then freeze once cooked.

We also do a cook one, freeze one lasagne Smile
