Best Route to Cakes Not Sticking?

I tried butter and flour today and was pleasantly surprised. Does it always work well? Do you have to use loads of butter and loads of flour? Is oil as good as butter, or should it always be saturated fat?

I know that lining the tins with paper is best, but I find the cutting etc quite tiresome, they always move while I'm filling the tins, and the edges of the cake don't come up nice and crispy.

Hmmm, just looked at the thread again, she said they burned, not that they melted ...

silicon will not burn. it is chemically impossible.

a thin layer of cake might burn, though. As will the cake if not taken out in time!

i also use the lakeland liners for cakes, it savers all the faffing about with cutting of paper, and the cakes always come out and it keeps the tin clean so save on washing up.

Also as i have spring form tins the cake mixture can leek out of the tins.

Oh, I ended up ordering the mermaid pans from Lakeland. They seem ok. I will oil them.

I'm sure I'll give silicone pans a try sometime, though.
