Using overripe bananas

I know this has probably been done to death but I've 6 dodgy looking bananas that I would like to try and use rather than chucking them.
I've had a scroll through the threads and recipes. I want to avoid banana bread or cake - I tried that a few months ago, not sure where I went wrong but it was vile!

Ideally I'd like to make a reasonably healthy treat for 16mo DS

I have some basic baking ingredients in the house and would prefer to avoid having to trail out to the shops again - plain flour, caster and muscaavado sugar, porridge oats, Granny Smith apples, dark choc chips, raisins, black treacle, golden syrup and honey. Cocoa powder, icing sugar, baking powder, bicarbonate, vanilla extract.

It's a bit of a Ready, Steady, Cook challenge! :)

Easy staple in our house are banana fritters - mash banana with flour til thickish consistency (don't bother adding sugar if very ripe as they'll be sweet enough) and fry in little pancakes

Peel, cut in chunks, put in freezer.

Take out a few chunks at a time, blend to within an inch if their life = the most ridiculously creamy, all natural, no added sugar banana ice cream.

You can't believe how good it is without trying it.

NB is actually very rich - you want smaller portions than you think!

Or spread on toast with peanut butter

Or if you have a blender, freeze them (peel and pop in a freezer bag first) then blend with a bit of milk for soft serve easy ice cream

I slice and freeze and use in smoothies
It makes them like ice cream
I do make banana bread too

my dc like banana pancakes (makes thick/american style pancakes)

3 bananas
1 cup flour
1 egg
half a tea spoon baking powder (or none if you use self raising flour)

blitz it all together and bake

Maus, how do you bake them? In a cake tin? Sorry, am not sure what American pancakes are!

in the pan/griddle. lower temperature that thin ones.
american pancakes are just smaller and fluffier/thicker than crepes

Banana oat cookies, mash banana mix with oats and cook very healthy

3 large, ripe bananas, well mashed (about 1 1/2 cups)
1 teaspoon vanilla extract
1/4 cup olive oil
2 cups rolled oats
2/3 cup ground almonds
1/3 cup desicated coconut
1/2 teaspoon cinnamon
1/2 teaspoon fine grain sea salt
1 teaspoon baking powder
6 - 7 ounces chocolate chips or dark chocolate bar chopped

Mix together and bake as cookies for about 15 mins on a greased baking tray at around 180c

My dcs favourite.

Banana pancakes, I do them like scotch pancake size and put them between greasproof paper then tou can freeze then and take them out one at a time as a quick snack/treat
