Millet and Quinoa - how to cook?!

naswm · 18/09/2006 14:44

I have been advised to eat Millet (for calcium) and Quinoa (for iron). I bought a bag each today in Holland and Barratt. The packets say to boil, but I vaguely remember reading something once about stir frying them?

Anyone help? or better still have some recipes??

TIA

sorry...but I'd chuck em in the bin, buy some decent multivitamins/minerals and eat something tasty...

I'm sure someone more helpful will have a good recipe!

It's FrannyandZooey you want she is La Quinoise....

I don't know about stir frying from raw - but I have cooked them in the usual way (ie rinse and boil) and then stir fry with veg/chicken etc - a bit of soy sauce helps to kill the taste I find

You can stir fry quinoa - millet is like porridge, just takes longer to cook

Quinoa Salad

Ingredients:

4 cups cooked quinoa (cook in ratio of 1 part quinoa: 2 parts water, 2 cups raw will yield about the right amount)
1 jalapeno pepper, seeded and finely chopped
1 small cucumber, peeled, seeded, finely chopped
1 large or 2 small tomatoes, seeded and finely chopped
¼ cup fresh mint, chopped

¼ Cup fresh lime juice
1/3 Cup extra-virgin olive oil
½ tsp fresh ground pepper
1 tsp sea salt

Toss the jalapeno pepper, tomato, cucumber and mint with cooled quinoa. In a separate bowl, whisk together the lime juice, olive oil and salt and pepper until creamy. Pour over quinoa mixture and toss again

Good mate of mine is from Peru and I love her Quinoa and feta dish - mentioned here - its a staple of Peru

Put seeds in food dispenser. Place in the budgie's cage.

Sorry.

There are other sources of calcium and iron if you really don't like them though.

I think quinoa is delish i love the texture but get the red kind - it is tastier. Don't cook it first though as the best flavour is obtained by stir frying some onion and garlic for 5mins then add the uncooked quinoa and mix it up coating the grains in the oil (olive oil pref) then add stock/ tin tomatoes and whatever veg you fancy courgettes, peppers and aubergines are particularly good though bring to the boil then simmer for 20 mins or so watching for the grains to burst to show they are cooked. Being veggie I have had to try all sorts of different sources of vitamins and i have found quinoa a useful and tasty food (for ds - as well).

I think millet is fairly rank but quinoa is fab. Just boil it as you would rice until the little tail bit starts to curl away from the grain (you will see what I mean when it happens )

IMO it is lovely just served as you would rice or couscous (a splash of soy sauce helps) but also as a breakfasty sort of dish with fruit juice, raisins and cinnamon in. Don't forget to wash thoroughly before cooking or it can taste bitter - and some varieties are definitely nicer than others (although I have conclusively failed to establish which are the good ones - I always decant the packet into a jar and then go oh bugger this is the horrid one again - let's now buy this one next time - oh which one was t again?)

I wash thoroughly, then toast it (as in, cook it in a dry pan, the washing water will boil off, and then the grains will darken a bit and make a nice smell), then boil it with twice as much water as quinoa (by volume).

I tend not to put flavouring in it, but use it as something to serve under things, iyswim. As I'd use brown rice.

I lived on millet for a while, but can't for the life of me remember why.
