Help! Roast beef left over from Sunday dinner!

What can I do with it today?
Got a great big piece left (cooked of course).

Need some brilliant ideas for tea and not just sandwiches !!

Mince it up in food processor and make shephards pie!! Thats is how the original recipe was meant to be done using leftovers!

Not my recipe just copied and pasted...

LEFTOVER ROAST BEEF ITALIAN STEW. SERVES 2 to 3.

1/2 onion chopped
1/2 green pepper chopped
1 T olive oil
8-10 oz. leftover roast beef or steak
2 cups beef stock
1 cup roasted tomatoes (or 1 can diced tomatoes)
1/2 T dried oregano
1/2 T dried basil
1 cup mushrooms, cut in large chunks
1 T chopped fresh basil (or frozen chopped basil, see below)

Cut onion and green pepper into 3/4inch pieces, and roast beef and mushrooms into 1 1/2 inch pieces. In heavy dutch oven type pot, saute onions in olive oil for 3 minutes, add green pepper and saute 3 minutes more. Add beef, stock, tomatoes, oregano, basil, and mushrooms, reduce heat to very low, and simmer 45 minutes, stirring occasionally. Taste for seasoning, add salt and pepper if desired. Add fresh basil when stew has cook to desired consistency and cook 5-10 minutes more. Serve hot.

shepherd's pie, definitely. i really don't like it done with mince, it tastes too raw even when it's cooked... but with yesterday's roast beef it is perfect. and easy-peasy.

I'd have it cold with jacket spuds, coleslaw and salad.

You could also use it in stir fry or wraps

Beef and Macaroni

Melt two tablespoons of butter, add one small sliced onion, and cook together until very slightly browned. To this add a tin of tomatoes, herbs and some chilli powder and let it cook slowly for about fifteen minutes, or until the tomato is somewhat thickened. Then add some cooked macaroni or any tube type pasta really - Penne is my favourite for this and let all cook together until well thickened.

Put the pasta and sauce in a casserole adding some remnants of the tender roast beef, cut small, pop some cheese or cheese sauce over the top and bung in the oven for 15 mins or so !!

Or slice the beef and if you have any gravy left over braise it in the oven with onions, celery, leeks and carrots - Yummy bummy !!

Or mince it add some softened onions herbs etc - pack it in a bread tin pop in the oven for 25 mins for meatloaf - douse it in gravy 10 mins before the end !!

Hmm i ended up making a meat and potato pie with it and although the kids ate it the meat was really tough.
It wasnt tough on the sunday , so maybe I should have minced it instead !
