Homemade hash browns?

I have a weakness for hash browns, love 'em. Was planning a fry up (well okay, mostly grill up, but that doesn't sound as good) next weekend, but I've increasingly found the bought hash browns to be too salty and yuk.

Has anyone got a good & simple recipe for them please?

no not has browns but potato latkes which are BETTER!!

enough for 4

3 potatoes
1 small onion
1 egg
2 tablespoons of flour - wholemal is good
seasoning to taste - I like that all purpose stuff for these
oil to fry - a bit of ghee or clarified butter if you have it too

Grate the potato coarsely and the onion finely in to a mixing bowl. Grab the mixture in your hand and squeeze out the moisture and discard. Add remaining ingredients and mix well.
Heat fat in frying pan to meduim and drop in dollops of potato and flatten and shape with a fork. No more than 4 per pan, you can do them in batches. Fry on both sides till crisp and golden and drain on kitchen paper.
They also taste good with added tinned drained sweetcorn

Actually you could grate 4 potatoes, go on treat yourself

Serves 4

700g (1.5lb) potatoes, coarsely grated
1 large onion, thinly sliced
2 cloves garlic, crushed
5ml (1tsp) salt
5ml (1tsp) pepper
45ml (3tbsp veg oil

Put potatoes in a pan of water and bring to the boil, drain immediately and rinse under cold tap. Pat dry in a teatowel.

put potatoe, oinon, garlic, salt, pepper in a bowl and mix. Add 30mloil and mix well

Heat large frying pan over med-high heat, add popato mixture. Fry for about 15 mins, pressing down and turning frequently so potato browns and crisps. Add oil if necessary.

Check potato is cooked through and as crisp/brown as you like it.

have to say I can't remember if I put the garlic in or not when I made them last!

Agree with SW - I was going to suggest latkes. I have made those recently and they stick together better. Depends if you want the individual potion type HBs or a big pile.

Hmm, yes probably will go for the latkes for stickability I think.

You know, it's a good job I'm half way through cooking a roast, because I'm now ravenously hungry....

Just to let you know, we had the latkes tonight - and they were GORGEOUS!

Were a bit unsure of how long to cook them though (they seemed to burn a bit quick... but being potato inside I assume they need a fair bit of cooking through?). Do you have a vague time estimate, suzy?
