Alternative crusts for ice cream pie?

Hello. DD1 wants an ice cream pie for her birthday. I am not keen on the pie bases made with crumbled biscuits and melted butter. I have had good results with a flapjack base, but I am not sure it would taste good with cookie dough icecream.
A regular pâte sucrée crust would be rock hard straight from the freezer, wouldn't it? What else could I use?

you could roll the pastry really really thin ?

Could you use sponge cake - eg swiss roll slices, arranged per a trifle, or any other cake arrangement?

Not sure what would happen if you soaked and used trifle sponges/lady fingers - would pos go rock hard?

Or do mini pies, on a (giant) cookie?

what about a filled biscuit....custard cream/oreo/bourbon ....the filling means they hold together just about. Just bash them up in a bowl with a rolling pin.

I often do this for cheesecakes....esp bourbons...just fabulous!

Mini pie not being frozen, rather being more of an open ice cream sandwich, so cookie doesn't go rock-like.

Would be good to know why you don't like digestive/butter base, got lots of suggestions but might not be acceptable for similar reasons

Thank you for the ideas! I might have to try them all before DD's birthday Smile.

I don't really like the texture of ground biscuits, and all I can taste is the melted butter. I don't eat the base when I am making a cheesecake.

The giant cookie sounds nice! I plan to make the pie ahead and take it out of the freezer 30 to 60 minutes before eating it. Do cookies freeze well? I have only ever frozen unbaked cookie dough (which, by the way, tastes very nice eaten straight from the freezer).
