Mine is always dry and uninspiring.

What can I add or do to the bird to make it ultra delicious?

spatchcock it! ....makes it much quicker to cook! It is super easy to do and means a chicken will be cooked in around an hour which solves your dryness.

other than that my chicken variations are

always plenty of S&P over the chicken then...

sit it on a layer of finely sliced onions
fennel also works and is delicious
squeeze of lemon juice over, and tuck the squeezed lemons into the cavity

and once it is cooked then let it sit for 20-30 minutes to rest.

Also try to buy a decent chicken, the free range ones from Lidl are rarely more than £8-9 and often less if you have a smaller one.

I stuff mine with lemon wedges, cloves of garlic and a handful of whichever fresh herb I'm using (.usually sage, Rosemary or thyme) then make little slits all over the skin and stud with slivers of garlic and more herbs. I squeeze lemon juice all over the bird, add a sprinkle of sea salt and then roast. I find a better quality bird roasts better and is less likely to be dry.

I use Lakeland wrap and roast - slap on butter and herbs, wrap up in the stuff and chuck in oven. Always comes out lovely - and a clean roasting dish!
