Chocolate crispy buns are by far the easiest, believe me I have no imagination at all and I can manage these.

have just made SuzyWong's brownie recipe and that was simple and very tasty:

A 7 or 8 inch square tin lined with greaseproof paper/baking parchment and the oven set to 180/GM4 moderate oven.

A small saucepan in to which you put

150g butter
150g chocolate, at least half of it should be plain

On a low heat and let it melt together and leave it to cool slightly

Then beat together in a bowl
2 eggs
1 tsp vanilla extract
175g caster sugar
Until creamy looking

Then sift in
100g plain flour
1 big tablespoon of drinking chocolate
And a quarter of a teaspoon of salt

Throw in 100g walnuts
And the chocolate and butter and mix well.

Scrape it into the lined tin and bake it for 20 minutes.

Then have a look at it, the top should be pale and cracking slightly, like a dried up muddy puddle, the body of the mix will still be slightly wobbly. If it isn?t like this then leave it in for another 3 minutes.

Leave to cool in the tin and then slice into portions

DO NOT take it in to the bathroom and scoff the lot

I have recommended this before - it's the easiest recipe in the universe but it's really, really lovely and completely foolproof. Dd is 5 and could almost make this all on her own.

8oz self raising flour
pinch of salt
4oz butter or margarine
2oz raisins
2 eating apples, peeled, cored and roughly chopped
3 oz granulated sugar
1 egg, beaten
2 tablespoons milk

Sift the flour and salt, rub in the butter until it resembles breadcrumbs

Stir in the raisins, apples and sugar

Add the egg and milk, mix with a knife. The dough will be soft.

Spoon the mixture into a greased 8" sandwich tin

Bake at 180C for about 50 minutes, or until a skewer inserted into the middle comes out clean. You may need to cover the cake with tin foil if it cooks too quickly on the outside.

Cool in the tin. When you turn it out, sprinkle with extra sugar.

Just made iced fairy cakes with my DD 2.8

best time decorating them as well, 2 games for the prize of 1.....

DD2 has brought home from playgroup digestive biscuits decorated with icing (icing sugar & water), hundreds and thousands, silver balls etc.

6oz soft butter or marg (melt in microwave if hard)
6oz caster sugar
6oz self raising flour
1 teaspoon baking powder
3 eggs

shove all in bowl and mix

if you want a nice vanilla sponge, put in a few drops of vanilla essence. If you want a chocolate one, instead of 6 oz sr flour, put in 5 oz sr flour and 1 oz cocoa.

Once all mixed up, either pour in fairy cake things or put in 2, 7 inch cake tins - in the oven at 180C for around 20-25 mins (start looking from 15 mins). Cake done when fork comes out clean. If you are doing fairy cakes, they won't need as long as 20/25 mins.

Ice as necessary. V easy!

Thanks to you all for the recipes and suggestions,still deciding which one to do,thought we could make something on sunday as she started school on monday and would probably appreciate some one to one time with me.

Finally decided to do the chocolate Brownies(yum)
dd1 moaned about the walnuts and had to pick them out
We left them in the oven for an extra 10 minutes as it was difficult to tell if they were cooked in the middle .
Delicious
Will probably make the Dorset apple cake next week!

Basic Vanilla Cup Cake Recipe
Ingredients
5 oz (150g) Butter - softened
5 oz (150g) superfine (castor) sugar
6 oz (175g) self-raising flour
3 eggs
1 tsp vanilla extract
Method

  1. Pre-heat the oven to 350oF (180oC).
  2. Line a 12 cup cake pan, with cup cake papers.
  3. Crack the eggs into a cup and beat lightly with a fork.
  4. Place all the ingredients in a large bowl.
  5. Beat with an electric mixer for 2 minutes, until light and creamy.
  6. Divide the mixture evenly between the cake cases.
  7. Bake for 18-20 minutes until risen and firm to touch.
  8. Allow to cool for a few minutes and then transfer to a wire rack.
  9. Allow to cool fully before icing.

Nigella's fairy cakes take 5 minutes

here you go:
125g self raising flour
125g castor sugar
125g butter
1 tsp baking powder
2 tsp vanilla essence
2 eggs
whizz all the ingredients together and then when it's smooth add 2 tbsps milk and whizz again. Put into fairy cake cases/tin and bake for 15 mins ish.
