why does my cheese sauce sometimes separate?

Somwtimes its fine. And i am not sure what i have done differently. Is it poor qualitt cheese maybe?

Butter ans flour in sauceman. Add milk. Stir witg whisk. Add cheese.
Sometimes i substitute butter for flora. And i just gues sthe quantitys cos i am too lazy to weigh them every time!

If you put the cheese in when the sauce is too hot, i.e. simmering, it doesn't melt in but goes stringy...could this have been the problem? If so you just need to take the sauce off the heat and let it cool for a minute or two before you add the cheese.

The sauce is too hot when you are adding tbe cheese. Remove the sauce from the heat before you add the cheese.

What kind of milk? Apparently skimmed milk makes a cheese sauce split.

I do the Delia Smith all-in-one for the white sauce and it never gos lumpy. I then add enough cheese for it to taste cheesy enough for me. I take the pan off the heat when I add the cheese though. Are you boiling it after you add the cheese? Perhaps that is why it is separating.

Its just whole milk. It may be that its too hot when i put the cheese in. Its not really a stringy texture though

Its kind of like a grease that doesnt mix in. Althoygh i do sometimes end up serving to the kids as it still tastes ok byt looks awful

Chedder normally. Various different ones. I never properly took note of if one brand causes it more than others. But wonder if tesco own brand isnt so good and that causes it.

This happened to me yesterday. I think I cooked the milk too long or too hot before I added the cheese.

Not sure what the problem could be then, other than cheese in when too hot. Any cheddar should be ok in my experience.
