What can I make to use up lots of eggs and then freeze?

We are downing in eggs (chicken sitting) and there's a limit to how many omelettes we can eat.

Don't have any cream and can't go and buy any today so ice cream is out.

Yes, as long as you don't want to boil them in the shell as sometimes an occassional one will expand and crack a little. But my Home Ec teacher always used to do this, and I do too.

Or make a big Victoria sponge? They use a lot of eggs?

Yorkshire puddings, bread and butter pudding, proper custard?

You can just use milk for ice cream but it wont be as rich.

It is my habit to come on these threads and suggest pavlova - so I will here too. It uses up lots of eggs and stores well tho not in freezer.

You cold make quiches and freeze? (er, I also seem to suggest quiche a lot too...)

Stuff with choux pastry? Profiteroles, gougeres...

brioche/challah?

Fritters - eg courgette? They should freeze ok.

Not for freezer, but curds, eg lemon, blackcurrant...

Don't eggs keep for weeks/months anyway, just as they are?

Just saw this. I was given a tray of 15 eggs this morning (to go with the 10 I already had)....and I've just portioned and frozen frittatas(frittate?) I used sliced new potatoes and onions, added a handful of peas to the mix at the last, topped with cheese and finished them off under the grill. Each frittata took 5 eggs and I quartered them before wrapping in cling film and freezing.
Job done and time now for a g&t before bed.
It's been a long hot day....

Might this be a suggestion for you? (The frittatas not the g&t, although....)

I always freeze raw egg if I've got loads to use up

Beat the eggs and freeze in a tub...I usually freeze in 2's

Defrost and use as you would any other beaten egg

No need for a mammoth cookathon, it's too hot Smile

Egg freezes really well but you should separate the yoke from the whites, that's what my mum taught me and it always works perfectly for me.
I freeze it in ice cube trays and it's always perfect.
