Homemade Coleslaw... anyone know the secret

This might be a stupid question BUT some people can make the most fantastic coleslaw that tastes so much better than anything you can buy in a shop.

Does anyone know the secret?

Well, ours is considered nice by ds and visitors...if you have a food processor, use a julienne cutter, not a grater. This stops the carrots and cabbage going too mushy. We use Hellmann's mayonnaise with a teaspoon of French mustard added and also chop a bunch of spring onions into the dressing. HTH

I use the coarse grater blade - and do a mix of Hellmans and plain yogurt.

Thanks all, will try all methods. Some people just have the knack to make this really light and creamy coleslaw that only comes along every so often. I wondered if maybe they added something to the mayo but perhaps it is just down to the cut of the veg.

I probably sound like a freak don't I, I'm slightly obsessed with this and have been for some time now.

I thought you was supposed to put a third salad cream and 2 thirds mayo, maybe not I just buy it anyway

oh no, not salad cream, vile stuff.

I do think it can be too crunchily chunky, can't it...do let us know your results, please!

yes you can cook veg in stock and it does make them tasy. Swede cooked in oxo veg stock is really nice.

You can also caramelize veg which is nice. My dh does this so I dont quite know, but I think you boil then water right down and then add some sugar into it to glaze the veg (carrots usually in our house!)

vinegar added to the mayo, and use soured cream too...
If using onion chop very finely a white onion...
I hate coleslaw personally but my chef budy gave me his secret recipe for summer bbq days!

fio2, agree - love salad cream.

Actually whilst we're on salad cream, I once had the most fantastic potato salad at a wedding, it had egg in it and I think spring onion and tasted like it might be part salad cream part mayo... anyone got any ideas if this has a name? or how to make it?

The mayo does need to be 'watered' down slightly with something otherwise it can be too claggy in the mouth (if that's a word) I use half mayo and half natural yoghurt or fromage frais, a squeeze of lemon juice and some black pepper. Personally I cut down on the dressing rather than add more, and I don't DO onions at all. Mine is usually cabbage/carrot/green or red pepper.

I like the fact that for 11 years MNers have been striving for the ultimate coleslaw :o
