Recipe ideas for a family weekend away-including allergies!

Hi,

I'm looking forward to a weekend away with family, there will be 13 of us. We're splitting the cooking into 1 meal each.

My usual 'go to' meals have already been taken (bolognese, lasagne, roast) and I'm struggling to come up with interesting ideas. To make it more annoying, all my many cookery books are boxed up and unreachable due to building work!

Within the group, we have allergy to fish, shellfish, eggs, nuts and dairy, and 1 vegetarian.

I enjoy cooking (when I get the opportunity) and I'm looking forward to spending a bit of time in the kitchen drinking wine while lovely family entertain my 2 DDs, but I'm completely stumped! I'm assuming I'll need to (at the very least) make 1 meat dish and 1 veg dish...looking for inspiration please Grin

Rice and a selection of curries?
Not sure about the cooking logistics for 13, but Fajitas?
What about some sort of chicken thighs / chorizo / new potato oven bake thingy?

How about 2 versions of tagine (1 meat, 1 veggie/vegan) with cous cous? Just make up the tagine base for both then split and add meat to one and veggies to the other.

Veggie chilli - I base mine on chunks of sweet potato and kidney beans; rice; lots of sides - nachos, guacamole, salsa, sour cream etc. Or build your own burritos/nachos along similar lines.

I would do one pot of pulaou rice (plain), and one chicken/meat curry and one veg/lentil curry

Wow, thanks, these sound great.

I love the idea of curries, but wonder if it would be a lot of hassle to take all my spices with me. The chicken/chorizo idea is appealing.

does your building work stop you using your kitchen at home? If not, why not make most of it ahead of time and take with you? As already suggested, would go with tagine or curries, both easy to make veg and meat versions, easy to transport, and couscous/rice easier than peeling potatoes!

Change, just dump all the spices measured into one little plastic bag, and then you just chuck it into the pot.

Do you have to cater for fussy kids, or will they eat most things?

Could you do a antipasti type platter, with olives, salamis, sun dried tomatoes, nice cheese and bread, salad, parma etc? Make some hummus, dips etc.

I second/third/LOVE the curries idea. I've done this in the past and taken premeasured pots of spices with me. I also made Bombay potatoes too and the hell with peeling potatoes. I NEVER peel potatoes!!!

Alternatively

Stuffed peppers?...Mince and veggie ones? With crusty bread and salads

Homemade veggie soup with yummy bread. Antipasti etc. Might be a nice break from lots of heavy dinners?
Just take your hand blender!

Bacon wrapped chicken breasts, cheesy (Philly) tagliatelle with basil and cherry tomatoes.
Stuffed pepper for veggie
Flavoured oil on pasta for the no cheese

Sounds fun!!!
