Could some of you post some nice no bake cheesecake recipes.

I want to eat it tonight as well!

Crush loads of Gingernut biscuits really small and mix with melted butter to make the base.
Then mix mascarpone with the juice and zest of two limes. Add powdered sugar to taste.
Make it all into a cheesecake in a digs and leave in the fridge to set. Serve straight out the fridge.

Crush digestive biscuits and melted butter for the base. Add some hobnobs if you like. For the filing a normal size tub of Philadelphia (Tesco value stuff will do as well) a tin of condensed milk and the juice of three limes or lemons, whichever you prefer! Takes a few hours to set in the fridge!

BBC baileys cheesecake. Doesn't actually taste like baileys, as you only use 2 tablespoons for a huge amount of everything else.

Works like a charm every time.

Ingredients

    100g/3½oz butter

    250g/8¾oz digestive biscuits, crushed

    600g/1lb 5oz cream cheese

    25ml/1fl oz Baileys or other Irish cream liqueur

    100ml/3½oz icing sugar

    300ml/10½oz double cream, whipped

    100g/3½oz grated chocolate

To garnish

    200ml/7¼oz double cream, whipped

    cocoa powder, to dust

Preparation method

Melt the butter in a pan and add the crushed digestive biscuits. Mix well until the biscuits have absorbed all the butter.

Remove from the heat and press into the bottom of a lined 18cm/7in springform tin. Place in the refrigerator and allow to set for one hour.

Meanwhile, prepare the filling. Lightly whip the cream cheese then beat in the Irish cream and icing sugar. Fold in the whipped cream and grated chocolate. When smooth, spoon evenly onto the biscuits.

Refrigerate and allow to set for a further two hours. Once set, remove and decorate with whipped cream and cocoa powder dusted over the top. Serve.

1 pack of biscuits crushed
melt a block of butter and add until the mixture is covered but not soaking
mix 2 250g packs of soft cheese with 125g icing sugar and 1 284ml cup of elmlea double cream cream i add mini marshmallows or fresh chopped fruit at this point or whatever you fancy in it and then you put the biscuits in the bottom of a cake tin (line it with greaseproof paper optional) and then add the cheese mixture and add melted chocolate or more fruit to the top and chill overnight Smile
