chicken stock question

I have a raw chicken carcass and wanted to make stock do I need to cook it first? I have looked in cookery books and they dont specify!!! tia :-)

I would say not - it's going to be simmering for at least 3 hours. Is there much meat on it?

well its a fairly small chicken and the butchers took the breasts off, maybe i could just cook it in a pan for an hour tonight then boil it for 2 hours tomorrow? Should I include the skin or is that just gross? sorry i really am clueless Thanks cupcakes

you can make stock from raw - not heard of anyone doing it though. take the skin off - it makes the stock all fatty

I think it would be ok to boil it raw.It is a way of cooking it after all.I would be inclined to do it for atleast 2/3 hrs at a slow simmer.

No you do not cook it, some people would put it in a pot of boiling water and chuck that away. (it helps with less scummy stuff to scrape away from top of water. Then boil the carcass with carrots onions etc for at least 1.5 hrs (2-3 better)

ta everyone :-) so get rid of skin, boil, drain water add veg and fresh water boil again remove scum then simmer for 2 hours or so. better get the kettle on!

Hoorah have done it, think I got my timing a bit wrong and took it off slightly before 2 hours but the chicken looks well and truly cooked (gave it a fairly good initial boil) and it will get boiled again for soup anyway?
