I need to get out of my ready meal rut. But how?

I don't enjoy cooking and find all the peeling etc a faff and now as the children are fussy and it's just me and them I find that I've resorted to ready meals.
They dislike rice and potatoes of any kind, funnily enough chips are ok.
So I tend to buy the asda chilled meals and then cook chips and steam bag veg. So we have things like chilled ready meal chicken with a sauce, lasagne , gammon and chips etc.
I've realised that we probably aren't getting that many vitamins as the food isn't very healthy. I'm not bothered about calories.

So what can I cook that would be a healthy meal baring In mind how fussy they are and how much I hate cooking.
So far I've thought of shepards pie, bolognaise etc but will have to look up the recipe as generally I rely on the jarred sauces.

Steam bag veg is ok as is frozen so I wouldn't worry on that score.

The problem with ready meals is the salt and sugar content. When you cook from scratch you can monitor this.

MN has a whole topic dedicated to healthy family food with tons of recipes here

Enjoy.

Do they do wraps, cous cous or noodles? Stir fries are really quick and easy. We did a beef one tonight with thin cut beef, 2 tbsp dark soy sauce, 2 tbsp balsamic vinegar, 2 tbsp worcestershire sauce and small piece grated fresh ginger. It was made in 15 minutes. You could serve this with egg noodles. Fajitas work well with wraps and can be a matter of slicing chicken breasts and vegetables, stir frying with garlic, chilli and ginger or optional herbs/spices. We like pasta pesto with chicken and leeks. Saute leeks, cook pasta. Mix together with slices of cooked chicken and pesto from a jar. Another favourite is enchildas. Fry some chopped vegetables (onions, peppers, courgettes) and turkey mince until cooked through. Stir through either pesto, oyster sauce, bbq sauce or a tin of tomatoes & some cheese. Fill wraps with this mixture and place in a baking tray. Top with a tomato based sauce or grated cheese then bake in the oven until the tortillas start to brown. Pizzas are easy to make. You can make your own dough or use wraps or pitta bread.

Basic foods are the easiest - so salmon steaks or chicken breasts, with chips and steamed veg.

Roast meat.or baked.Fish is really easy. Just buy the cut you like, season with a few herbs and whack in oven. You can do roast.potatoes at the same time, if you buy new.potatoes you don't have to chop much, just cut them in half, I don't even bother peeling.
