I know I have asked loads in the past week- it's this new health kick

Yes i don't really like fish but have to eat it 3 times a week[sick]

What on earth do I do with bloody salmon??

We are to have minimum potatoes too, we had them with sunday dinner yesterday, was thinking of maybe with vegetables not sure I aint got a clue at all this stuff

How do I cook the salmon? Hubby is looking forward to it so want it to be nice for him coming home from work

PLEASE PLEASE HELP

I put it in foil, sprinkle with a little water, salt, pepper and 30 mins in the oven.

I cook it in foil same as Quootiepie, but with no water, salt or pepper, then make a basic-ish risotto (with onion) and towards the end stir in some frozen peas. Once the fish is done, flake and stir into the risotto.

Either in foil with lemon juice, pepper etc in the oven or grill gently. You could serve with rice and steamed baby veg.

Whatabout Teriyaki Salmon?
For two
2 fillets
2 tablespoon of Sake
2 tbs of Soy sauce
1 tbs of Mirin
1 teaspoon of sugar

Put all ingredients except fish in small saucepan and heat up, stir until sugar dissolves. Then fry Salmon skin side down, when ready to turn over pour over marinade and simmer/saute till done.
When fish is done, put onto warmed plates and boil up marinade until thick and gloupy and then pour over fish.
Serve with noodles or rice

i have a recipe for a salmon and leek tart. it's dead easy and de-lish.

buy one of those savoury pastry cases. put chunks of uncooked salmon fillets inside - 2 fillets will fill the case. soften leeks in butter and pour over a white sauce. add sauce / leek mixture to salmon in tart. cook for about 20 mins. it is truly yummy. serve with salad or chopped veg.

On Saturday I did this.

Chopped up garlic, root ginger, mixed with a little olive oil, salt, pepper and lemon juice. Spread it over salmon fillets and left to marinate for 1 hour. In the meantime, cooked some spinach, cooked onions in a little olive oil. Put spinach in casserole dish, followed by onion and finally salmon. Cover with foil and bake in oven at 180C for half an hour, remove foil and bake for another 5 minutes. Delicious! I served it potato gratin (layes of seasoned potato and onion with white sauce poured over).

ok

I have put the salmon bits in tin foil-nearly had a heart attack touching the thing.

Seasoned with salt and pepper and out a lemon and a lime wedge on each one wrapped it up. I take it from what I read that I bake it for 30 mins at about gas mark 4.

Now to serve with it!!!!

do i relent and allow steam potatoes again today.
and steam veg?

or do a quick veg stirfry?

I would do veg stir fry with noodles. Also, what about rice cooked with vegetables. You could also try cous-cous - make it more interesting by adding vegetables and use vegetable stock to add flavour.

I don't cook it for so long but do like salnon done in the oven. A nice easy way is to season it with s+p, and wrap a few slices of procuitto (sp?) or parma ham around it, drizzle with olive oil and a litle squeeze of lemon and I bake in hot (about 220) oven for about 15 mins. Lovely with spinach

Here's a recipe for a quick easy and yummt creamy salmon pasta. serves 4

142ml carton of fresh cream
2 tbs of sndried tomato puree
250g of garlic and herb cream cheese (or ordinary cream cheese with a sprinkling of dried mixed herbs and a bit of crushed garlic)
2 salmon fillets
large handfull of cooked brocolli florets
pasta

Cook the salmon in the microwave - just put in a bowl and cover - takes about 2-3 minutes - dead easy!
Mix the cream, tomato puree and cream cheese with herbs and garlic in a bowl until creamy consistency. Cook the pasta (and cook the broccoli seperately- either steam or boil). When pasta is cooked, flake in the cooked salmon, add the brocolli and the cream sauce! Ultra yummy!

Spread parma ham with pesto, plonk salmon it and roll ham round it. Drizzle with olive oil and stick in pre-heated oven 200 degrees for 20mins

I an so glad I looked at this thread. Think DS would flip if he had salmon and baked potato again, so now going to buy some palma ham and surprise him!!!!

How about this one:

For two people:

Peel and cut 300g carrots into thin matchstick strips. Put in a saucepan with a knob of butter, the zest and juice of one orange and 1/2 tsp ground coriander seeds. Add some water to just below the surface of the carrots and cook uncovered over a high heat until the liquid has evaporated and the carrots are tender. Season with salt and pepper and divide the carrots between two sheets of kitchen foil.

Place a fillet of fish on each pile of carrots and scatter with chopped spring onion, grated fresh ginger, chopped fresh coriander and finely chopped green chilli (optional). Put a couple of slices of fresh orange on top and a knob of butter. Fold over the foil and tightly roll the edges to make a parcel a la Jamie Oliver.

Put on a baking tray in a preheated oven (200) for 20-25 minutes.

We had this with new potatoes. But I think it would also be good with rice or couscous. It has quite a sweet taste because of the oranges but if you use the chilli it counteracts it so not too sickly. Btw I used Waitrose's Cooks Ingredients ready chopped ginger and chilli (ie out of a jar!) as I didn't have fresh and it was fine.

Easiest way to cook salmon is in the dishwasher. Dont ask me how I know this I just do.

You can also marinade the salmon fillets in teryaki marinade (bought, don't f@rt around with homemade), roast off in the oven, then serve with boiled noodles dressed in soya sauce, a bit of sesame oil and some chopped up spring onions. Don't serve this if you know, or are in any way aquainted with my mother. I told her this recipe, and she's served this to every last one of her mates. Even the veggie ones.

Another one is to marinate fresh tuna in ginger, soy sauce and spring onions, then fry in nut oils for a few mins each side and plonk on top of noodles and some stir fry veg, adding a bit of sweet chilli sauce at the end of stir fying.

For Jambuttie, I use tinned sardines in tomato sauce for this.

Slice a warmed (in the oven) ciabatta lengthways, spread with pesto, sprinkle some toasted pine nuts and lob some oven roasted veg on top (onion, mushroom, courgette, pepper, roasted in olive oil with a drizzle of balsamic vinegar when it comes out of the oven). Honest it's bloody tasty.
