a nice not too much, not too little fruit, not too sweet but not too dull either

I think I used this recipe last but added a good amount of vanilla essence with the milk.

225g/8oz plain flour
pinch of salt
1/2 tsp bicarb
1tsp cream of tartar
25g/1oz butter
150ml/1 qtr pint milk or buttermilk

preheat oven to 220 c 425 f gas 7
Flour a baking sheet
sift flour, salt bicarb, & cream of tartar into a large mixing bown. Rub in butter til it looks like breadcrumbs and stir in enough milk to make a light spongey dough. At this point I chuck in the right amount of sultanas (I like a lot!)
Turn out dough and knead til smooth. Roll out, cut out blah blah blah. Brush tops with milk.

Bake for 7-10 mins til well risen and golden brown.

No eggs!!

Heres my easy peasy scone recipe-

225g/8oz SR flour
small pinch salt
55g/2oz butter/marg
150ml or 3/4 pint milk

Mix flour & salt. Rub in butter until breadcrumbs. Mix in the milk. Form into soft dough with palette knife. Knead lightly on floured board then pat out into a round 2cm thick. Cut into 5cm rounds.

Put on greased baking tray, brush with milk, 220 / 425 / Gas 7 for 10 mins.

Sweet scones - add 55g / 2oz caster sugar to dry ingredients.

Fruit scones - add 55g / 2oz dried fruit and 25g / 1oz caster sugar to dry ingredients.

Savoury scones - add 85g / 3o\ finely grated hard cheese and 1 tsp dry mustard or 55g / 2oz chopped olives, anchovies or whatever you fancy.
