Hiya

Hubby and I have started a new health kick which I must say is quite good.

We have to have oily fish 3 times a week- which at 1st I was apprehensive about but have found I like it.

Red meat twice a week max

And 2 days meat/fish free

I need some ideas from you lovely peeps please?

I have heard of lentil bolognaise- how do i make that?

Also we tend to have stir fried veg on meat/fish free days what else can we have?

We have bought things too like lentils, broth mix, yellow split peas, cous cous, vegetables and I have no idea what to do to make things interesting and tasty so as we stick to the healthy plan

we have a lot of roasted veg with eother couscous or rice. V nice and easy too.

Lentil bolognese, I guess you'd do the usual bit with the onion, garlic etc, then ad the lentils instead of the meat.

We also have things like stuffed peppers, pasta bake, veg lasagne, cauli cheese, jacket potatoes, that sort of thing.

You could try a vegetarian curry like chickpea and potato curry. Vegetarian stew where you use lots of root vegetables to produce a substantial meal. Chickpea or kidney burgers/patties is another good one. Pasta with arriabata sauce (no meat version) is tasty.

you ciuld try soya lasagne made exactly the same as meat but add soya instead

Massive question!

DP is vegetarian and I am not. I guess I have meat when we go out or perhaps one evening meal a week as a result. I enjoy it so much more as a result and only have quality. Most of these 'meat replacement' things such as soya mince and quorn are not that nice IMO.

There are loads of things you could do. Lentil bolognaise is a good idea. Speedymama's ideas are all great - curries always nice, and you won't miss meat at all.

What about doing a Mexican beany type thing? In a large pot, fry onions, peppers, and a generous amount of crushed cumin, seeds, some smoked paprika, perhaps some dried chilli or fresh, then after a couple of minutes with the spices in and coating the onions etc, add a glass of wine, and let it lift off the flavours. Then add various beans (tins are fine), add a couple of tins - maybe one of kidney beans one of mixed beans, add a tin of chopped tomatoes, and maybe a tin of sweetcorn, some button mushrooms... kind of anything you want really.

cover and simmer for maybe an hour, stirring occasionally, it should become a lot more saucy... taste and add whatever you think it needs, some tomato puree or ketchup, worcester sauce, seasoning. Add some fresh coriander at the end.

We always make loads, and always want it two nights running! Maybe have with rice on one night, maybe wrapped up in tortillas the other night and 10 minutes in the oven for the tortillas to crisp up. Both nice with chunks of avocado with lime on.

Sorry got carried away! You may not even like Mexican food!

We don't eat peppers, runnerbeans, greenbeans and a few other though.

Mmmm, make dahl - fry onions and garlic, stir in lentils and spices (turmeris, cumin, curry powder and/or chilli powder), add boiling water to cover, plus a bit of lemon juice, keep stirring and add water if it gets too thick and sticky, cook until lentils have turned to mush (about 30-40 mins). Serve with rice.

Also for cous cous, just cook it, and stir in a selection of your fave vegetables stir-fried, eg oinion, pepper, courgette & mushroom is yum, or carrot, sweetcorn, peas and broccoli with herbs such as thyme.

Lentil bolognese is easy - just replace the meat with the lentils, and cook pretty much like the dahl, but instead of water, lemon juice and curry powder, add a can of chopped tomatoes, plus some extra water, and herbs like organo annd basil.

Lastly lentil smash - cook green lentils with onions, water, herbs, tomato puree and veggie stock, mix in cooked veg such as mushrooms and peppers, and put in a casserole dish, then top with a layer of buttered bread (butter side up) and bake in the oven. Mmm-mmm have to make that tomorrow!
