Dry pork leg joint - what to do with left over meat

Hi, I roasted a pork joint yesterday and it was too dry. Does anyone have any ideas as what I might have done wrong? It's putting me off cooking the same again! I have another leg joint in the freezer which will need using within a month, so I'd like to do it right next time.

What can I do with the leftover meat now? I can only think of cottage pie, but I'm sure you wise people will have more ideas! Thanks.

The meat on the leg is quite lean without a lot of fat distributed through it which makes it difficult to cook without it drying out. That's why it's good for making ham and gammon.

With the leftovers you could chop it into matchsticks and do a stir fry with hoisin/plum sauce, cottage pie is a good idea because you can add some gravy. Or chop finely add cooked tomato sauce and make a lasagne or pasta dish. Mince it and make moussaka?

Next time cut it into steaks and pan fry or marinade and grill/BBQ it as kebabs. It needs to be cooked quickly to prevent it drying out.

I would use the dry leftover meat in fajitas - spice it up and add peppers, cheddar, sour cream etc.

Could you make a casserole? Yesterday I made a pork, parsnip and cider casserole with chicken stock, some dried herbs and a bayleaf. The long cooking time and lots of moisture should help to moisten the meat if it's dry and it's very tasty!

if I have left over pork/beef I use it in rissoles. Add cooked/microwaved onion and cooked spuds and mince together, form into burger shapes and fry
