Great things to do with fresh mint?

H all, I've got lots of mint growing in the garden and I'd love some ideas as to what to do with it! Meals, desserts, drinks? Anything you've made that you would recommend?

Greek(ish) salad- tomato, cucumber, black olives, feta, chopped mint, salt and pepper, lemon juice and olive oil.

Or stirred through Greek yoghurt with shredded cucumber.

This salsa verde is dead easy and goes with everything from a plain tomato salad to fish and chicken. Or with bulgur, grains, tinned bean salad. You can play around with it depending on what you have in the fridge/garden.

1 green sweet pepper halved and seeded
150 ml olive oil
1 tbsp water
half tbsp capers
1 tbsp chopped parsley
half tbsp chopped basil (I put in loads more)
2 tbsps (why not a handful?), chopped mint
2 tsps Dijon mustard
1 clove garlic
juice half lemon

  1. Cook pepper in a tbsp of the oil and water very gently in a saucepan for about 10mins. Peel the skin off when cool enough to handle
  2. Combine all the ingredients and whizz in blender/food processor.
  3. er... that's it.

There are some lovely recipes for Indian-style Lamb dishes which use quite a lot of mint. This one from Nigella

Put a handful of mint leaves and a couple of spoons of caster sugar in a mortar and pestle, grind until smooth, serve with acidic fresh fruit like pineapple. Jamie Oliver recipe - he uses pineapple, blueberries with coconut yoghurt.

I also drink a lot of fresh mint tea when we have tons of it in the garden.

Mint and butterbean pate (mint, tin of butterbeans, lemon and garlic to taste, puree or mash). Eat with bread or on crackers/oatcakes.

Also thirding mint tea - totally different experience from mint-tea-teabags - just pick a couple of sprigs, pour boiling water over and leave for a couple of minutes. You can add honey if you like it sweeter.
