Ideas for a lentil/veggie curry?

I enjoy doing curry for dinner and my DS loves them (for the moment anyway!!). I normally get a jar of sauce or a paste and make chicken curry, I'd like to do a vegetable curry in the same way and also add some lentils....how do you think this would go? Any ideas on how long to cook the lentils for?

Trying looking for red lentil Dahl recipes - very simple and delicious and you only need a few spices. My toddler isn't overly fond of curry but loves this.

this cauliflower and chickpea one is nice.

Red lentils are nicer than green IMO. You can cheat and get tinned ones.

I did a quick one last night.

Chopped up some onion & garlic and fried for a few mins. Added a tin of chickpeas (drained) and half a jar of tomato/garlic pasta sauce. Then I put in a couple of handfuls of red lentils, and five 'lumps' of frozen chopped spinach and a couple of chopped mushrooms.
Half a cup of water, a sprinkle of garam masala spice, a small tin of coconut cream and left it to cook on a low heat for 20 mins.

I use a lovely chicken, lentil and sweet potato curry recipe. I've also used other veggies instead of the chicken (but it's a lot nicer with the chicken :D )

Brown 500g of chicken thigh fillets in veg oil. Chop 3/4 onions and once the chicken is browned put it aside and brown the onions in the same pan. Add 2/3 tablespoons of patak curry paste (I usually use rogan josh) and stir for a minute or two. Add chicken back in and give a good stir. Add 200gish of washed red lentils and two large sweet potatoes, peeled and diced. Add 500ml chicken stock and a tin of coconut milk. Leave to simmer for 1.5 hours. Just before serving add a bag of fresh spinach and stir through.

We serve with boiled rice, usually does 8 adult portions.

I'm not a massive fan of lentils, but I can recommend kidney bean curry with mushrooms and cherry tomatoes thrown in.

I love this really easy Veg curry recipe. You could easily add a cup of lentils in with the veg. I usually do it with a pack of fresh veg or with just potatoes, broccoli and carrots. It is a very flexible recipe.

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, crushed
2 1/2 tablespoons curry powder
2 tablespoons tomato purée
1 (400g) tin chopped tomatoes
1 vegetable stock cube
285g frozen mixed vegetables
340ml (12 fl oz) water
salt and pepper to taste

  1. In a large saucepan over medium high heat, heat oil and sauté onion and garlic until golden.

2.Stir in curry powder and tomato purée, cook 2 to 3 minutes.

  1. Stir in tomatoes, vegetable stock cube, mixed vegetables, water, salt and pepper to taste. Cook approximately 20 to 30 minutes until vegetables are well done (not crunchy). Sprinkle with fresh coriander prior to serving.

Thanks they all sound lovely! Just trying to get a few more veggies in instead of chicken all the time, unfortunately DS doesn't like kidney beans and can spot them at 100 paces but all great ideas.

I made this Cauliflower and potato curry last week and it was really good, although I think it's misnamed as it really didn't have much potato in but lots of lentils.

Also, having read the recipe back I'm not sure I put in chopped tomatoes as I remember thinking at the time that it was nice to have a curry without tomatoes in the sauce. Blush It didn't miss them anyway.

Chickpea curry is simple and delicious. Mix it with rice et voila. It's a hit with everyone i've cooked it for, often with repeat requests for it!

What about a biryani?

In an oven prof pan put hard veggies, like onion, carrot, squashes etc, drizzle with oil, cook for 10 mins. Add soft veg and garlic, cook for another 10 mins.

Then add a curry paste (homemade or ready made...google jamie Oliver curry pastes for a fantastic selection of easy to make ones) basmati rice, stock, a handful of lentils, some coconut milk if you want it milder, chilli if you want it hotter) cover tightly and cook for at least 40 mins. Check it halfway through to see if it needs more stock or some added garam masala.

Finish with cashew nuts and shredded coriander. Can be served with a watery daal. Yum!
