Best Veggie recipes for single people

Hi all

I want to eat a more vegetarian based diet ideally 4/5 nights a week if not a bit more.

I love all vegetarian meals but Im about the only one so I am looking for you best veggie recipes which can either feed me one night and then be fridged / amended / frozen in single portions.

I used to eat a load of vegetarian meals but I have got out of the habit as it is such a faff to cook one thing for me and something else for everyone else.

Any and all recipes gratefully received.

I love this leek and halloumi cheese superfast supper:

Chop a large leek finely and fry over a low heat with some oil or frylight until starting to soften.

Add a teaspoon of cumin seeds and a good squeeze of lemon juice. Once cooked, remove from pan and put to one side.

Cut the cheese into squares and fry in the pan - each side goes golden brown - takes a few minutes on each side.

Add in the leeks and just warm through for a couple of minutes.

you can also make any kind of freezer friendly meat dishes as veggie ones - e.g. shepherd's pie, lasange, chilli - just replace the mince with veggie quorn mince or similar. Quorn fake chicken chunks are also fantastic for curry - just again follow the instructions on the curry paste but replace the chicken with quorn chunks....yum!

Thanks, I´m not a veggie quorn type of person. I know I might be odd but its too processed for my liking. I´d rather do veggie curry with actual veggies and beans etc. Thats probably just me, but the main reason for wanting to eat more veggie dishes per week is to eat veggies!

Maybe have a look at Hugh F-W's veggie cookbook? I got it for Christmas a couple of years ago and have used it tons - there are loads of different ideas in there and a good variety of time and effort required - lots of quite quick things to do that are nice.....I'd also recommend the BBC good food '101 veggie dishes' book. It is a little book with (unsurprisingly) 101 veggie recipes, not very expensive at all (under a fiverI think) and I'd say worth the investment. You can get them in Smiths and other bookshops - it's part of a big series. The low fat one is also good. Again, lots that can be thrown together quickly and easily - I've probably done most of them with some of them ones I've done over and over again. Hope that is helpful!

Amicablemoomin that´s GREAT thanks! I´ve just order the Jamie Oliver Veggie book but will get the Hugh F W one too - love some of his recipes. Will keep my out for the BBC good food 101 veggie dishes book too. Great thanks - love cook books!

Thanks, I think the best way to find new GOOD cook books is recommendations although I probably have enough to open a small library and I don´t care LOVE THEM! Love cooking!

If you are in the market for cookbooks the Ottolenghi Plenty book comes highly recommended. We're not veggie so I have the other two Ottolenghi books, but I think I'm probs going to get the veg one anyway as I love their food soooooo much. You need a few different herbs and spices but once you have those you just start spicing in their stylee (cumin, zaatar, olive oil, sumac, parsley) and that makes everything taste good.

oh yes, great suggestion Wilson, I have it and it is good. Bit more special, and perfect for the summer! If you ever get a chance to go to his restaurant it is fabulous too.
