What do you eat for lunch?

Stuck in a terrible rut with lunch. So bored of sandwiches! Don't have loads of time to prep it though. I always have grand plans of making a batch of soup once a week but it never seems to materialise!

Plus I am not really eating enough fruit and veg. I get really tired in the afternoons and I am sure a healthier lunch would help that too.

I have fruit for pudding and as a mid morning and afternoon snack but only at work as I eat when I'm bored. At the weekend, I will often just have a brunch, mid afternoon meal at 4pm ish and then a snack for dinner at 7-8pm.

What about salad? Very quick to throw together, and can provide a few of your five a day. I buy those little gem lettuces, as they keep well. I usually add cherry toms and cucumber, and sometimes pepper too. Then for the protein, tuna in oil works well, or ham, or cook extra chicken or something with dinner & add that. I sometimes also add pine nuts or sunflower seeds, and sometimes boiled egg or avocado too. I find this sort of lunch very filling.

Have just eaten leftover sesame chicken with salad. And tons of Mayo. Delicious. Also a pack of salt n vinegar squares and lucozade. I have a cold. So am allowed.

But it's usually salad/soup/

When I make my own I make a salad with leaves, red onion, pesto chicken, avocado and either feta or mozarella

Mostly salad, made from leftovers and anything else in the fridge. Speed up process by making a large quantity of dressing in a jar for the week. Wash a head of lettuce spin and store in the lettuce spinner - this has resulted in everyone eating more lettuce, it lasts at least 5 days.

I buy the fresh soups and they do two lunches. Plus a piece of fruit or maybe a yogurt.

Today I had chicken fajita leftovers with salad. Delicious.

I make a big pot of soup every Sunday with stock made from the roast chicken carcass and put lots of veg in it and the left over chicken. I take that to work every day in a food flask.I also take a mixed salad.

I had sandwich fatigue too, a few months back. Now I have avocado on toast. Delicious.

Mash an avocado with some lea and perrins, lime juice and as much black pepper as you like. Bung on toast. Devour. You can add tomatoes if you have any to hand.

Very yummy, filling and cheap too. I use lime juice from a bottle. Beats a mayo- heavy tuna sandwich

Although I so often revert to sandwiches, some of my faves (and which don't leave me feeling tired and stodgy) are:

Beans/eggs/cheese on toast
Homemade soup - I batch cook and freeze in portions
Tinned mackerel fillets in tomato or mustard sauce with ryvita or toast
Cottage cheese with ryvita or on a jacket potato
Last nights leftovers - especially if something like roast chicken/lasagne
A protein rich salad - tuna, chicken, boiled eggs with extra treaty bits like avocado
Plus I will admit to an occasional pot noodle

Yes shoe the lettuce goes back into the fridge. Jamie Oliver does something similar but he uses the whole of the salad drawer lined with a tea towel - I don't have room for that. But just having the lettuce washed and dried makes all difference and is so much better than bagged salad.
