My daughter eats a lot of pasta and couscous as its easy to cook with her around my feet. I usually steam a few veggies at the same time-green beans, pumpkin, cauliflower, cabbage, brocolli etc and break them up with a fork and mix them in, sometimes with pesto, cheese or passata as well.
For a very quick meal-pasta with a handful of peas and a cube of frozen spinach all in the same pan. Cook, drain and sprinkle with cheese.
Any left over meat or veg I make little pasties with. I use prerolled pastry and spread pesto over it. Then I divide it into small portions, wrap up into interesting shapes, glaze with egg and sprinkle sesame seeds on top and cook for 10-20 mins in oven. My Dh makes delicious ones with leaf spinach, tomato and cheese. My DD will eat these hot and cold and I usually have a supply in the fridge for a quick and tasty lunch. I have managed to get all sorts of new veg inside her this way.
French toast-dip bread in beaten egg and lightly fry-this is more of a treat. I also make little pancakes and these go down well with fruit and natural yoghurt.
Another recipe is to blend together white fish, flour, eggs, a little butter, some potato and veg. I bung it in the oven in those mini cake cases and sprinkle with grated cheese instead of icing. They have a texture like a sponge cake, quite unusual and a delicate fishy taste. They dont last long!
A recent success was spinach leaves gently fried with mushrooms, red pepper and cherry tomatoes w/ sesame seeds and put in a sandwich/mixed in couscous.
