Want to make a simple tasty curry - any recipe ideas ? want to impress husband!

Hello

We always buy our indian takeaways but would love to make one for my husband. Any ideas on recipes that are not too complicated and lengthy. Thanks in advance.

Don't know any actual recipes, but those Patak pastes are really nice. You usually have to soften onions, add paste and meat. Brown meat, add tomatoes (and/or water depending on the curry you're doing), and leave to simmer. If you can leave to simmer for 30 minutes, it really improves the curry.

I always use Patak pastes too. I mix with natural yoghurt and marinade the meat before cooking. Always delicious. I've used Tikka Masala, tandoori and balti sauces.

Veeraswamy Hot Madras Curry Paste is to die for. You can get it in Waitrose. It is very hot so be careful how much you use. Another tip is whatever paste or spices you use grate about a couple of tablespoons of fresh ginger into it.

I use Patak too but I find them a little oily.

Yes dead easy one- Fry some chicken and onions, add a dollop of chicken Korma paste and a tin or two of coconut milk. Stir and simmer a while. Yummy.

Instead of using ready bought paste/sauces, try making your own. For chicken balti, I do the following.

Heat the oil in a large saucepan and add one large chopped onion.
2. When the onion is nearly turning brown add 2 cloves of chopped garlic and 1 tbl of chopped ginger.
3. Cook for another couple of minutes and then add 1 tsp of cumin, 2 tsp of turmeric, 1/2 tsp of ground coriander, 1/2 tsp of ground cinnamon and 1/4 tsp of hot chilli powder.
4. Fry the curry powder for about another 5 minutes or until oil rises to the top (if it looks to dry add more oil)
5. Add 400g tin of tomatoes and simmer 15 minutes
6. While the mixture is simmering fry the chicken in a bit of oil to seal it (add a little bit of turmeric to the oil so it turns the chicken yellow)
7. Put your curry mixture in a blender and blend until smooth
8. Put back in saucepan and add chicken
9. Simmer for about half an hour. If you leave it overnight, the flavours will develop nicely.

Another one we like is keema curry.

  1. Fry 2 large chopped onions followed by 2-3 cloves chopped garlic and and about 2 cm chopped ginger.
  2. Add 1 tsp of ground cumin, 2 tsp of turmeric, 1 tsp of ground coriander, 1 tsp of cinnamon and 1/4 or 1/2 tsp of hot chilli powder, depending on taste.
  3. Fry for 5 more minutes and then blend the mixture. Return to pan.
  4. Add 1lb of ground lamb or beef and cook, stirring and chopping down with the side of a heavy metal spoon to break up any lumps.
  5. When the meat has lost its raw look, add 400g tomatoes, 1tbl of lime juice and 1 tsp sugar.
  6. Cover and simmer for 1 hour. Sauce should be thick
  7. Add 1-2 cups of peas and continue cooking until the peas are tender, 5 to 10 minutes. Serve with rice or naan bread or both!

Your CHICKEN BALTI receipe is really DEFFO BRILL

DH has made it for our tea and it is deffo brill

We didn't use as much ginger or chilli cos that is our preference

I feel a little embarassed putting this one on 'cause it's super easy... but quite tasty anyway, good family filler:

1 tin chicken soup (we use the mega cheap one!)
1 tin condensed chicken soup
1 cup mayo
1 tsp curry powder
1 tsp lemon juice

mix the above in a pan and warm through - pour over cut up chicken pieces in casserole dish, sprinkle breadcrumbs and grated cheese on if you wish, bake for 1/2 hr at 180C Gas 4 (check chicken is cooked through)

Like I say, VERY EASY and maybe not very impressive, but I think it's quite scrummy!

Lots of veg, some chicken and 3/4 pint of gravy in a saucepan. Add half a jar of mango chutney, 1 diced apple, and enough curry powder to make it as hot as you want it.

very yum and not too fatty.
