Suggestions for frozen baby carrots?

I bought them thinking it would encourage me to eat more vegetables. Then remembered I don't really like just plain carrots.

Any suggestions on how to use up 2kg of frozen baby carrots? (Or should I save them for when DS starts weaning?).

I can get my non carrot eating DDs to eat carrots if they are roasted in honey. I parboil them first and then tip them into a roasting pan with a little olive oil and some runny honey. They don't go crispy like roast potatoes but are ready when they start to caramelise.

I would use them to make soup. I don't think that freezing does carrots any favours. It ruins the texture and makes them watery and tasteless.

I've never tried frozen carrots in this tomato soup but can't see why they wouldn't work in place of fresh

Put them in a pan with a knob of butter, a couple of spoons of muscovado sugar and a jug of veg stock. Boil as per instructions, but a couple of minutes before the end take the lid off, add some balsamic vinegar and finish cooking. Tastes delish and takes no longer than just cooking them in water.

Carrot hummus?

It's a HFW recipe, carrots raised with cumin seeds and garlic and then purees with some tahini.
