If 2yo DD likes chilli, she may also like...

I'm stuck for ideas that I can bulk make and that DD enjoys.

The only healthy meals that she seems to actually enjoy are omelette and chilli with rice. I use the annabel karmel chilli recipe with extra blended veg to thicken the sauce and sneak extra veg into DD.

If any of you more experienced cooks have any ideas, that would be great.

Spag bol?
Meat balls and pasta / rice?
Lasagne?
Mild curry?

Not bulk freezing, but very quick: egg fried rice.

What doesn't she like? That also helps to direct things!

Burritos, fajita wraps (with chilli) and chilli with pasta/jacket potato.
Spag Bol/curry/fish pie she might just like more flavour, kids like spice and variety too!

Mild curry
I make a one with sweet potato, green beans, sweet corn, red pepper and/or lentils/chicken. Cook up with a tin of coconut milk and a spoon of korma curry paste. My 5 and 2 year old love it and the 5 yo is pretty fussy.

Anything with mince, by the sounds of it. I add lots of veg to the following - Spaghetti Bol, cottage pie, shepherd's pie (a big hit in our house) and moussaka (yum!). Try the recipes in the Innocent family cookbook

Sausage hotpot? It has the potential to hide huge amounts of vegetables

Worth trying some sort of light stew with dumplings (or gnocchi) added for hopefully edible novelty?

Sorry for the late reply. I thought I'd replied earlier. Turns out my phone ate my message Hmm

Thank you for all the replies.

She'll eat most veg if chopped up small with mash and gravy/cheese sauce, but doesn't seem to really enjoy it.

I made spag bol once, thinking she'd love it and she'd only eat the spagetti. However, to be fair, it was a bit tasteless. Does anyone have a good recipe?

She does seem to like more flavourful dishes so I'm thinking something like a mexican chicken stew or child-friendly curries. If anyone has any recipes/links to recipes along those lines.

Definitely think sausage hot pot will be a hit, especially if I add some chilli. I'll be trying that this week.

I do a mild curry the kids love, it was originally from anabel Karmel but I don't follow her recipe closely any more.

Chop an onion finely and cook on medium heat in a tbsp oil for a few minutes
Add a chicken breast chopped into small pieces
Add 1 rounded tsp mild curry powder ( or more or less to taste)
Add 1 cup rice
Stir and cook for a minute or two
Add a cup and a half apple juice
And a cup of chicken stock
Cook until rice is done, add extra water if needed, idea is for water to be mostly absorbed as rice is cooked
In last few minutes add frozen sweetcorn, peas or other cooked veggies chopped into small pieces

Both kids have liked this since they were 10 months or so, and still do. It's quick to cook too, only takes 20 mins from start to table.

Serves me and 2 hungry kids. DD often finishes off any leftovers at breakfast the next day.

We all like this black bean chilli which is perhaps similar enough she will try it but different enough to expand her tastebuds?

The other recipes on the blog are lovely too. They are veggie, but not in a way that you miss the meat and very child friendly.

I do a very mild Thai green curry with prawns or chicken and lots of green veg (broccoli, sugar snaps etc). Very easy with bought curry paste and coconut milk.

ShoeWhore · 03/05/2014 17:31

chicken korma is lovely.

Jamie Oliver's Pregnant Jools' Pasta is very tasty, she might like that too.

Tacos?

Try the my daddy cooks book, loads of simple to make flavoursome recipes such as the Mexican lasagna, sticky salmon. Chicken and apricot casserole, Singapore noodles.
