What are your smuggest I am a perfect mother super healthy recipes?

My DS's nursery are not the healthiest when it comes to food so am trying to compensate when it comes to dinner.

To be clear I am not constantly shoving spinach down his throat, we very often have things like homemade pizzas, lasagne with some veg, it's all a balance etc etc. I know that things like this are perfectly good.

But am interested to hear what everyone makes for their kids when they are in need of something really really virtuous and quinoaish.

Try this Potato & leek rosti with carrot, chickpea and coriander salad Dd loves it and it's quick and cheap to make.

I am trying to get more fish into the DCs too. They'll eat tinned tuna fairly easily but anything else can be a chore.

I wouldn't do the three veg if I thought he had any kind of nutrition at nursery (they are allowed as much pudding as thy want though!!) !

So many brill ideas. Def want to do the fish challenge! My main obstacle really is the fussy DH, wants meat, veg and potato. Nice things like yoghurt, avocado etc are unacceptable to him ad I obviously don't want to be making separate meals for us and DC!

Try this Gordon Ramsey fish dish, it has meat, veg and potatoes too Wink, serve mild chorizo for the dcs and the dressing on the side, my dcs loved it! Also works with salmon.

Fish - mash sardines with cream cheese. Squeeze on lemon. Add black pepper for adults. Make sandwiches.

These are really easy fish cake/burger type things. Loads of protein, you can leave the onion out or add sweetcorn/spring onion, whatever you like. Good for a hot version of tinned tuna!!
