I've got a HUGE sponge cake (as the title suggests) and we can't possibly eat it all before it goes off.
Can I freeze it?

I'd take the fondant off.
Cake will be fine, and suspect the jam will be OK too, but defrosted fondant sounds like a soggy disaster waiting to happen, unless someone else can correct me?

I suspected as much.
Its my wedding cake, so I'd rather not bin it!

Congratulations!

If you cut the tops of the fondent off, and cleaned the bottom (with small amounts of vodka) so there is no cake left, could you let it dry slowly, and keep it, and freeze the cakes for eating at a later date?

Just eat the cake and share the rest among friends and colleagues. It's a sponge, and really not worth the effort of removing fondant and faffing. It won't be as nice defrosted; just a drier sponge with no icing on :-(.

Fondant freezes absolutely fine!! No need to take it off. When defrosting it will 'sweat' but the key is to leave it be and don't touch it until it dries out and then scoff away!

agree with momb and congratulations :)
