Help - good leftover food adults and kids

Help me!

I am not the best cook and for our week food I can cook for do and I in the evening and have leftovers of that our nanny can heat up for kids tea the next day makes everything better!

I have four or five recipes. I have rotated them at 3 per week for the last four months (tuna pasta bake, bolognese, sausage casserole, pork casserole, chilli)

Help me add some variety back to our lives please. What else would fit this brief?!

I'm a nanny and have always cooked for my charges.
In fact I often cook enough for my employers to have too in the evening. Would your nanny be happy to do that a couple of times a week?

A curry is easy to make with pastes and coconut milk.
My charges like frittata (with baked beans because they are heathens! Grin). This is easy to make, and easy to reheat.
A bean stew? I use 4/5 tins of different beans, sliced onions and garlic, tin of tomatoes and some chilli powder. Maybe adding a tin of sweetcorn for crunch. Lasts 2 days for a family of 4.
Various risottos? Chicken and mushroom, vegetarian etc

Thanks drink will give those a go.

Nanny is fantastic at everything but food so I feel happier leaving some thing for heating up so I know they'll get a proper meal.

Meatballs with crusty bread and salad is a favourite here. As are turkey mince enchiladas. The leftover turkey mince gets served the following day with salad ontop of some nachos. Slow cooked bbq chicken served with anything (rice, in buns, with mash and vegetables, salad and chips). Quesadillas (could prep and nanny could grill.) Homemade quiche. Homemade pizza or cheats pitta or naan bread pizza.

Do you have a slow cooker? If not I strongly recommend one. Then you could throw something in overnight or in the morning, not always relying on leftovers.

Pulled pork with bread buns and salad.

Spanish chicken casserole (chicken thighs in top of chopped tomatoes and other veg like onions/peppers/mushrooms/celery, plenty of paprika)

Frittata can be done in slow cooker

Curry?

You can even do a full.roast in the slow cooker!

Thanks all, going to try meatballs and fajitas this week!

We have a slow cooker - dd1 would never eat the stews and dh it sniffy about the gammon and coke recipe I found on here so it's in the back of a cupboard. Maybe time to. Rediscover it!

I just made this recipe very easy recipe:

I would happily have less met in each portion.
I also didn't use pepper as my kids don't like it but doubled quantity of beans and added 1/2 cup of frozen peas 10 min before it was finished.
I also didn't use chilii and put some dry ginger - but that I guess would be up to you.
You could add 50 g of rice (to make it 200 g) to this portion and it will still be tasty as there was quite a lot tasty liquid left over, if necessary you would add 3-4 tbsp of water.

It given 3 v.generous portions.

I think by adding more rice, peas and beans you could easily stretch it to the portion for dinner and leftover for next day.
