Chicken recipes for all the family that can be frozen

I try and make a few meals a week for my DH, myself and my DD. I tend to make say on a Monday evening, DH and I eat our portions on a Tuesday evening and I cool and then freeze a portion (normally at least 2 portions) for DD for later. So basically I need something that I can cook, freeze and reheat OK for DD.

I have plenty of beef/mince recipes but would really like some chicken ones (I have fruity chickien curry and chicken & leek lasagne but that's about it).

I have no recipes to offer (am crap, usually burn things) but would like your chicken and leek lasagne recipe please!

i make a chicken and mushroom pie.

i use the following :-

2/3 Chicken breast cut in bit sized pieces

250g mushrooms

1 onion finely chopped

i small tin of mushroom soup

ready made shortcrust pastry

  1. Fry onion in a small amount of olive oil

  2. Add chicken when chicken brown and mushrooms fry for a few minutes

  3. Add Mushroom Soup and a half tin of water cook for about half an hour.

  4. make pie then i only put the pastry on top (as i don't like a lot of pastry) and cook for about 30 - 40 mins serve with veg.

Or you can freeze the mixture and just make the pie when cooking. allow to defrost before cooking.

I sometimes add peas or sweetcorn to the mix as well.

Chicken and Veg Gratin,

4 Cooked chicken breasts cubed
1 large carrot diced
250g mushrooms sliced
1 onion finely chopped
wholemeal bread crumbs
unsalted butter
cheddar cheese
flour
whole milk

1)fry onion, carrot and m'rooms in a bit of olive oil until soft,
2)add chicken, fry off until chicken is piping hot.
3)add some flour to mix and cook for 1-2 min
4)add some milk to bind and thicken the mix
5)scoop into oven dish and cover with wholemeal breadcrumbs, a bit of grated cheddar and a few cubes of butter
6) bake in oven for 20-25 min

it makes about 4 portions for baby and 2 adult portions.

threelittlebabies here's my chicken and leek lasagne.... I am afraid it's actually out of a she who must not be named cookbook that my DH bought for me xmas. I wasn't too chuffed when I saw it but it actually has some good recipes in it

50g unsalted butter
2 leeks, washed finely sliced
1 courgette, chopped
2 large, skinless chicken breasts, diced
50g plain flour
600ml (1 pint) full fat milk
1 tbsp grainy mustard
25g gruyere cheese, grated (you can omit this if you like)
6 lasagne sheets ? ready to cook
2 tbsp parmesan cheese

  • Pre-heat the oven to 180â—¦c. Melt the butter in large saucepan or frying pan, add leeks and cook until they begin to soften.

  • Add the courgette and chicken, and stir-fry for a few minutes until the chicken is just cooked through. Add the flour and cook, stirring continuously for 1 min.

  • Remove the pan from the heat and stir in the milk, a little at a time, until the sauce is smooth. Return pan to heat and bring gradually to the boil, stirring continuously, then simmer for 2 mins. Add the mustard and remove from the heat, add the gruyere cheese and stir in.

  • Lightly oil a lasagne ovenproof dish about 7.5 cm deep. Layer the chicken pieces and lasagne sheets, starting with a layer of chicken and finishing with a lasagne sheet, and using a slotted spoon for the chicken so that you leave the sauce behind in the pan.

  • Spoon the remaining sauce over the lasagne, sprinkle with the parmesan and bake in the pre-heated oven for 25-30 mins until golden brown on top.

Mum2FunkyDude - do you find the gratin freezes well? I've tried Chicken & Mushroom gratin from the book I mention below and it was awful when frozen and defrosted....

Sorry pmsl - just noticed my oven temperature on my recipe - think the oven would be a bit hot - like the surface of the sun!!! LOL. I obv meant 180 degrees c. (Sorry copied and pasted it from a word document and it went a bit wrong).
