How do you prepare a parsnip? REmove core or not?

Parsnips are going on offer tomorrow in Aldi (59p per bag) and I fancy some parsnip puree having drooled at Masterchef earlier. Do you remove the centre core or not? I am a parsnip novice.

No, just peel, as far as I'm concerned!

No, just peel and cuts ends off. I quarter them and roast with oil and honey

Never heard of removing the core. I just peel and roast them (think I'm going to try adding a little honey, Crispy, as it sounds delicious).

I always remove the core (that's how my mum taught me to prepare them) . Have tried them 'whole' but definitely prefer them core-less!

I've never really thought of them having a core, I peel, top and tail and cut into quartets :)

Really big, old parsnips have a slightly paler centre that can be a bit tough and bitter but you don't see them on sale very often now. Plus, varietal development means that the nastier varieties have been quietly dropped in favour of nicer-tasting ones.

Just like a carrot. Then either boil or roast. Can also be mashed.
Curried parsnip soup is nice if you have a surfeit.

Chop them up and cook in milk. Then when soft, purée.... Yum.

depending on how shrively or dirty they are I peel them or not and cook like carrots.
