Ideas for using up LOADS of natural yoghurt

Welliesandpyjamas · 06/04/2014 13:41

We usually get through masses of yoghurt but somehow this week, i've been left with one and a half of those BIG pots of natural yoghurt...use by date is today!

I will make a cucumber raita and some banana frozen yoghurt lollies. Any good (and pretty easy) ideas for using up the rest (likely to be about two thirds of a big pot)?? Not cakes though, done too much baking this week Grin

I use natural yogurt with pesto, pasta and either bacon or tinned tuna.

Welliesandpyjamas · 06/04/2014 13:45

Yes, that sounds good. I love pasta and pesto on a lazy day, and today definitely qualifies! Do you mix in the yoghurt just before serving? If so, does it not cool it down too much? Or do you mix it through for the last part of the cooking?

Also a good idea, kotinka. Marinade today for tomorrow's tea, the extra day past the BBE will be fine.

Muffins? I found some nice savoury recipes by Hugh fearlessly eat-it-all in the guardian the other day when I was looking for ways to use up a surfeit of eggs.

Welliesandpyjamas · 06/04/2014 14:17

Ah, that sounds good too. I too have a ridiculous amount of eggs to use up! Will google 'hugh muffins eggs yoghurt' Grin

Add condensed milk and freeze. Yummy yogurty ice cream.

Gremlingirl · 06/04/2014 14:25

Yogurt is already, by definition, gone off milk. I bet you could use it for WEEKS after the sell-by date and it would be fine as long as it's not actually mouldy.

Welliesandpyjamas · 06/04/2014 14:41

That's a fair point, gremlingirl, takes the pressure off a bit!

Line a sieve with a clean tea towel, dump yoghurt in, leave over a bowl in the fridge overnight, hey presto - soft cheese! Yummy on toast :-)

RayPurchase · 06/04/2014 14:50

O
I eat yogurt for at least a couple of weeks past it's bb date, as long as its got no added sugar/ fruit etc.
If you want to use it up make a yogurt based curry like butter chicken.

WillieWaggledagger · 06/04/2014 14:52

I eat natural/Greek yoghurt well past its use by date but another option would be a yoghurt cake (lots of recipes online) which would probably be fine to freeze too if you didn't want it right now

bonzo77 · 06/04/2014 14:53

We eat yoghurt weeks out of date. Seems to do no harm. I'd go for marinade, tzatziki, smoothies.

IDismyname · 06/04/2014 14:54

Lemon Yoghurt Cake

Nocomet · 06/04/2014 14:55

Unopened will go a week past it's date almost certainly.

Thai green curry, yogurt works instead of coconut milk.

Slacktacular · 06/04/2014 14:55

Great if you have thrush Grin

RemusLupinsBiggestGroupie · 06/04/2014 15:52

Make lassi - tin of mango or peaches, blend with yoghurt and a bit of icing sugar. Ice cubes. Lovely.

Or make a yoghurty curry with potatoes and cauliflower - lovely.

Welliesandpyjamas · 06/04/2014 18:36

Mmmm lots of nice ideas. Thank you. Especially slacktacular Grin

I made raita and started on some frozen yoghurt lollies. Then once my gannets children saw the tub on the counter, they were suddenly overcome by a fresh urge for yoghurt and honey, so polished off the last of that one. Just one full tub to go - now to choose what to make next!
