Anyone got an easy recipie? Dds want to make them today and I can find every other biscuit under the sun in my books except this one! Dd1 said ask your friends on the computer! So here I am!!

yes got one of those recipe cards through the post...have cooked this before and they're scrummy.

Mix together 100g/4oz of soft light brown sugar or caster sugar with 50g/2oz of butter or margarine, in mixing bowl. (until pale and creamy)...

To this add 1 teaspoon of vanilla essence, 1 egg, 100g/4oz of plain flour and a pinch of salt.

Stir in 100g/4oz of chocolate chips (milk or plain).

Spoon heaped teaspoonfuls of the mixture onto the greased baking sheet. Space well apart to leave room for the cookies to spread while baking.

Bake for about 8 minutes at 180oC/350oF/Gas 4...until just set and golden in colour...allow the cookies to cool on the baking sheets for at least 10 minutes, then transfer with a spatuala to wire racks to cool completely...left overnight can be stored in airtight container....Good luck and have fun

ok will get when ds1 in bed. meanwhile - I need recipes for plain ish biscuits/bars - no nuts or other suspicious stuff in it - cherries and raisins tolerable (ds1 very fussy)

At the mo my stalwarts are me. moments, flapjack,fairy cakes,cookie,gignger snaps

any other ideas...In a BIG baking phase....

Coddy, try these, have done once and needs perfecting tbh, but melt in the mouth gorgeous!

Shortbread.

Beat 250g/8oz of unsalted butter until it resembles whipped cream then gradually add 100g/3 1/2oz of caster sugar and continue beating until light and fluffy.....

Mix 500g/1lb of plain flour into this mixture and knead dough for 5 mins or until very smooth.

Next divide dough into 3 pieces, press into 20cm/8in circles on baking sheets and crimp edge by pressing with fingers, or use a fork to decorate. Mark each circle into wedges.

Prick shortbread all over with a fork and bake on centre shelf of oven for 20 mins. 180oC/350oF/Gas mark 4......Then reduce temperature to 150oC/300oF/Gas mark 2 and bake for 20 mins longer or until golden and crisp....cut through marks until shortbread is still warm then cool.....You can put these into airtight containers, if they ever get into the containers,..as so yummy.

good one - will try lavender, really good for my diet!

MElting moments.
...............
5 oz butter (room temp)
3 oz sugar
1tbsp of egg
1/2 tsp of vanilla essence
4 oz SR flour
1oz porrige oats

Cream butter and sugar ( I use an elec whisk) then stir in rest (ideal for helpers as not hot).

stir together till it makes a squidgy lump then break off walnut sized bits roll each one into a ball, coat in extra oats and squidge onto a greased baking sheet.

space apart as they spread a lot. 170degrees for 15 mins

Coddy, sorry only just seen this, I used the first recipie only 'cos it was a larger amount and dd2 wants to take some to pre-school today. It makes plenty.

Can I just add melting moments are great with crushed cornflakes too. My dds think bashing the corflakes is the best bit!

did double rations so had to use saucepan to mix!

DD wanted to make some last night and was lookinng for a recipe, so I gave her the one off here. There aren't any left and she baked double!!

She says they are the next best thing to warm M&S ones! ( She phones them sees if they have just baked and then nips off there in her car during the lunch hour, tqkes them back to school and they all go mad for them!

Mary Berry is a baking godess in my eyes...made her easy cheesecake and her coffee and walnut traybake for a picnic this weekend. They were absolutely delicious..mmmmmmmm...best baking book I ever bought!
