looking for the recipe for Enids chicken nuggets

I'm sure I am just being dim, and it must be posted on here loads of times, but am having trouble finding this recipe. Can someone tell where to search or post it again please. Am dying to try them!

Just did a search and came up with this (posted by Enid):

Homemade Chicken Nuggets

750g minced chicken
175g breadcrumbs
175g grated cheddar
1 tbsp mayo to bind
1 clove garlic
salt and pepper
beaten egg and some fine toasted breadcrumbs to coat the nuggets

Preheat oven to 180C. Mix all ingredients up to and including salt and pepper together. Form into whatever sized nuggets (its up to you, mine are sort of walnut sized) and roll them in beaten egg and then in toasted breadcrumbs. You can freeze them now if you want to.

Place on greased baking sheet and cook for about 20 minutes (45 if frozen). Voila!

Everytime I see this recipe, I think it looks great....but have never made them. Here's a dimbulb question - how do you mince chicken?

NOt sure, unless you have one of those mincing machine thingies. Can you do it with a blender-type thing, I wonder? Asked in Waitrose, but don't think they do it, and they only have one mincer there, so couldn't mince to order, so to speak. Will have to try an actual butcher, I think.

Am back - seems to have worked - are now in freezer freezing hopefully ! Not sure if chicken was actually minced - more macerated I'd say !

Although whilst doing it I did wonder to myself whether it would have been just as good to cut small strips of chicken and just breadcrumb then ??

Anyway - will try dd on some tomorrow and see if they are acceptable to her highness !!!

Hello - I'm back !! DD wasn't keen at first and said she didn't like the breadcrumbs - I did half brown and half white bread - but she did eat most of them - and dh thinks she just said that to be a pain - as ever !

I tasted them and they were yummy - much nicer than shop bought !

On her other thread she said she used a blender Earlybird. That's what I did too and it has worked fine - although I now realise that I missed the cheese out of the recipe - Doh !

I made these with cooked chicken the other day and they were great too. I just chopped it in the blender

I would have thought so - isn't there some rule about not refreezing - but if it was frozen raw , then cooked and refrozen as nuggerts I would have thought it would be fine !

Reporting back on my attempt - have to confess to a basic blunder...Was going to use minced turkey for first attempt, before trying the blender thing. Anyhow, was in a rush and got minced lamb out of the fridge instead and didn't realise until it was all mixed and dh looked at empty packet and said - oh, thought they were going to be chicken.

However having got that far i had no choice but to carry on. Put in some rosemary as well, and hoped for the best.
End result - empty plates all round!!!
So there is another option though it does end up more fatty than i expect with chicken.

In Italy - homemade escalope is standard food particularly for kids. Beat a chicken breast dip in beaten egg and breadcrumbs - fry in a little oil until cooked. Not really sure why anyone would buy this ready made. You van make loads and freeze them.

My mum makes a great ham and cheese version. Beat the chicken breasts until quite thin. Layer chicken , one slice of cheese and one slice of ham (sort of meat sandwich with the cheese inside)

Dip the whole thing in beaten egg then breadcrumbs (mum always used white - I use whoelmeal and add some ground sunflower seeds for added goodness - not that I'm aspiring to lentil weaving or anything )

You do need to fry then though - else they go too dry for me though they may be OK in the oven for some people. Fry the ham side first then flip over to the chicken side. Don't turn over again -else they fall apart a bit.

Not exactly chicken nuggets but very nice nonetheless.

Reviving this old thread as I have just come home from shopping, and am finally ready to attempt this legendary recipe.

One question though: seems that two lots of breadcrumbs are used? One mixed in with meat, and one to roll the nuggets in?

Just want to check before I start......
