I'm baking liver cake muffins to sell do my dog-mad friends. Baked the liver cake and put into paper muffin cases with paw prints on. When they had cooled, my daughter iced them for me using low-fat cream cheese and a couple of dashes of vanilla essence. They looked fantastic when she had finished. We put them in the fridge in Tupperware boxes with lids on. The next morning, the cases had collapsed leaving the muffins standing on a circle of paper. We lifted them off and put them into fresh cases only to have the same happen within a few hours. Why is this? And how can I produce lovely pert muffins in cases that stay up?!
