i bought a duck..... now what do i do?

was heading for erm...crispy aromatic...erm or something. thought it would be cheaper than a takeaway? help?

sorry.... stab it all over with a fork then roast it on a tray so the fat drips out. Simple as that. Delicious.

basically you boil it, then dry it out, then season it and roast it
is lovely but quite labour-intensive iirc - these days we normally do it with a duck leg rather than a whole one and [shame] the recipe is on the back of the label.

Ken Hom's recipe is here but he steams and deep-fries it.

Aromatic duck is quite complicated - but you could just baste it with a mixture of soy sauce, hoisin and sherry / chinese wine and roast in the oven. (roast it on a rack over some water as it is really fatty)

Duck is sooo yummy.

My favourite is roast duck with orange sauce (cointreau in the sauce is good!)

if you roast it save the fat that runs off it because it makes great roast potatoes

Just so long as you are sure it is a duck?
I bought a duck for dh's birthday on Sunday, roasted it and did a nice port, ornage and red currant sauce to go with it, only to discover when I started to carve it that it was, in fact, a free range chicken. Doh!
