I've got an enormous courgette...

... any ideas what I can do with it?

More of a small marrow really.

Do you think I could peel and chop it up, boil/steam it and then kind of stirfry it with corned beef???

or is that one of my many 'disaster cuisine' specials?

NB we don't eat pork

Cut in half lengthways, core it, and then stuff with mince (bolognese style). Then bake in oven for about an hour (cover in foil).

or stir fry the courgette middle flesh with chopped bacon, breadcrumbs, black pepper, pine nuts, chopped mushroom and parmesan, re'stuff' the filling and bake

mmm. both sound nice. wat, any ideas for anything other than bacon? when you say middle flesh, is that like the seedy bit, or everything except the peel?

Boil them whole, or in halves until slightly soft.

Cut in half lengthways, scoop out fleshy bit.

Mix fleshy bit with breadcrumbs, grated cheese and any other bits (we use onion or chives) and put back in courgette.

Put in baking idsh and cover with foil.

Bale til melted and soft.

courgette and lentil soup
courgette and lentil soup

serves 4

2 vegetable stock cubes
500ml boiling water
50g lentils
4 courgettes chopped
4 small onions chopped
400g tin chopped tomatoes
1/2 tomato tin of water
1 tsp chopped fresh mixed herbs
pepper

Dissolve stock cubes in the boiling water in a saucepan. Add lentils and simmer for 15 minutes

Add remaining ingredients to pan and cook for 30 minutes or until veg are soft

Keep soup chunky by briefly crushing veg with a potato masher ( I usually blend it)

Serve immediately.

low gi and no fat!

agggh, just realised you don't eat pork
Onions,many many mushrooms and a little stilton goes very well!

Or a lovely rich tomatoey sauce with rice, sweetcorn, onions, garlic etc etc
