Can I join in? This thread just happened to pop up in Active Conversations and my Hairy Dieters radar went off - I got the book last year and it is not an exaggeration to say it has become my bible for family meals. I've got the second dieters book too but shall save my review of that for another time. These are the recipes I've tried so far ...
Pan-Fried Bacon with Poached Egg & Balsamic Tomatoes - Divine. simply divine. If I'm feeling naughty I add a slice of toast and some mushrooms fried in a spray of fry-light. This is my Sunday morning treat breakfast of choice.
Roasted Cod with Parma Ham and Peppers - really tasty, we add some potato wedges to make a filling family meal. If using frozen fish fillets, make sure they are well defrosted and dry them with kitchen roll before cooking, otherwise the veg gets a bit watery. Probably because I'm using cheap frozen fish but needs must.
Spanish-style Chicken Bake - dead simple, no fuss. I do find it quite salty so don't add any extra salt as per the recipe.
Salmon with Chilli Ginger Sauce - bought a jar of stem ginger specifically for this recipe and never looked back. I tend to make the marinade in the morning and leave the salmon to marinade all day for extra flavour. If you are a cheapskate like me use cheap frozen salmon fillets, try wrapping them in a foil parcel to bake so they don't dry out in the oven.
Masala-marinated Chicken with Minted Yoghurt Sauce - only made this once so far, it was really lovely and the kids enjoyed it but it was time-consuming to make so will probably only do it again when I've got lots of time on my hands.
Mediterranean Beef Burgers - a firm family favourite, we have them once a fortnight usually with some home made chips or wedges. They satisfy my burger craving without too many calories. (Turkey burgers from the second book are also a big hit in this house).
Roast Pork with Apple Gravy - my only complaint is that they suggest not serving the crackling - wtf.... wtaf
. As if! The stuffing/herb rub is packed with flavour and also lovely as cold leftovers.
Peppered Steak with Mushrooms - lovely as a treat, and the sauce tastes rich without having to use cream.
Gammon with Parsley Sauce - love it, never make parsley sauce any other way now. Although I put a lot more sauce on my plate than the photo in the book!
Lemon and Thyme Roast Chicken - must have made this at least 10-15 times. Chicken is our go-to Sunday roast, this one tastes great without having to smother it in butter etc. Gravy is also delicious.
Easy Crispy Chicken - we have adapted this one and use the breadcrumb mixture to make chicken nuggets. Basic but tasty and pretty quick to make.
Cajun Spiced Chicken with Potato Wedges and Chive Dip - I must admit I never bother with the chive dip (it's just yoghurt and chives) but we like the spicy chicken and I use the potato wedges recipe as a side dish to loads of things.
Harissa Chicken with Bulgur Wheat Salad - a lovely light meal. It's not enough to satisfy appetites in this house unless we have pudding afterwards, so I often make a lot more of the bulgur wheat salad and fill us up that way. It would be a good lunch dish. I'd never tried bulgur wheat before I did this recipe - it's lovely and makes a nice change from couscous or rice.
Quick Cod & Prawn Gratin - only tried this once, I wasn't paying close attention to the recipe and the sauce split a bit. Still tasted lovely though, but next time I try it I will do it properly.
Skinny Beef Lasagne - I was a bit disappointed with this one. I so wanted to love it, because lasagne is one of my all-time favourite meals. And I do love leeks, so thought it would be a win-win. But it was an awful lot of effort and it didn't really come close to the real thing.
Low-fat Minced Beef & Potato Pies - brilliant, quite a faff to make (but I'm not a big pastry-maker to be fair). Tasted lovely and it's nice to be able to have a pie when you're trying to eat healthily. I tried freezing some but they don't freeze brilliantly - the pastry gets very tough.
Cottage Pie - yummy yummy in my tummy. I could eat this every day in winter. Lovely lovely comfort food.
Rich Beef and Ale Casserole - done in the slow cooker this was a great hearty stew. And nobody complained about the parsnips even though 3 out of the 4 people who live in my house "don't like parsnips".
Chilli Salad Bowls - wow! So easy but really fun, kids love them, I love them, what more can I say. I usually make the normal chilli recipe once a week (see below) and use the leftover chilli to fill the bowls rather than making fresh as per the recipe.
Cumin-crusted Vegetables - we quite often have these on a Sunday instead of "normal" Sunday veg. Makes a nice change from beans and broccoli and really easy to do.
Chicken Korma - as people have already said, not really a proper korma but certainly a very tasty mild curry. I could make it in my sleep I have done it so many times. One of my faves from this book. Best done with a hand blender rather than a food processor.
Chicken Jalfrezi - not quite as tasty as a takeaway but about 1/10 of the calories and still really, really flavoursome. A Friday night favourite for us.
Chilli Lemon Tuna & Broccoli Spaghetti - so simple yet so very delicious. Just simple ingredients, really quick to make, fills you up. Nuff said.
Chicken & Mushroom Risotto - I use leftover chicken from Sunday to make this, and usually add some mange touts or asparagus if I've got any. I adore risotto so I adore this. Sometimes I add a drop of dry white wine for added luxury (then drink the rest of the bottle, obviously).
Southern-style Jambalaya - only tried this once, but it went down well with all concerned. I cheated and used a tin of chopped tomatoes instead of skinning and chopping my own. Seemed to work fine!
Italian Meatballs with Chunky Tomato Sauce - these are just gorgeous. I use 50/50 pork and beef mince. We have with spaghetti with a sprinkling of parmesan on top.
Chilli Con Carne - the Best Chilli Ever according to my ds. We have it once a fortnight, it says it serves 5 but I split the quantity in half and use half to serve 4 of us (2 adults, 2 teenagers), with rice and a taco each, then freeze the other half to use in Chilli Salad Bowls (see above). Nobody has ever complained about not having enough.
Rich and Meaty Bolognese - another family favourite. And a good way to get my fussy son to each courgettes and celery - although he picks the mushrooms out
Moist Carrot & Sultana Cake - made it a couple of times. Tastes fine, lovely with a cup of tea in the afternoon.
Skinny Lemon Cupcakes with Drizzly Icing - I've made these a lot. I wouldn't really say they are nice enough to serve to a friend. Maybe to someone you're not that keen on
The texture is a bit weird but they taste okay if you really need a cake fix but don't want masses of calories.
Simple Tuna & Sweetcorn Pasta Salad - make it on a Sunday night, take it to work Mon-Thurs. Easy, very low in cals and fills me up for lunch. Great idea to mix the mayo with some water and wine vinegar (sometimes I use lemon juice instead) to make it go further. Love it.
Cheese, Leek & Onion Pasties - these taste great. Best eaten fresh, I have frozen them but the pastry goes quite tough.
Phew. That was longer than I thought. I could do a similarly long review of the second book which also has some real gems in it. They just seem to have a knack of getting all the flavour into food without using loads of butter or cream etc. We probably eat 5 times a week using recipes or adaptations from the books. And are a lot healthier and thinner for it!
Can't comment on Mr Hollywood because I don't have his book. And I make all my bread in a breadmaker (sorry Paul).
