lemon curd
fresh strawberries, cream
melted chocolate folded into fresh whipped cream to make a fudgy chocolate filling
cream with a little instant coffee (tsp mixed with tbsp boiling water)
mango slices and creme fraiche

I have icing sugar, vanilla essence, some clementines, butter and rhubarb jam and I don't know how to make the filling..

make butter icing

sieve icing sugar and mix with softenend beaten butter (look on side of box for recipe or google it)

Spread in middle and add jam

butter icing made with part butter, part cream cheese?

Favourite at the M&T group I make cakes for is cut up grapes, strawberries and bananas in cream.

Did an 'emergency' filling last week of butter/icing sugar/hot chocolate powder (didn't have enough icing sugar to do just that) and that was pretty successful

If you do jam, it spreads better if you heat it first (has a nicer consistancy too)

Chocolate spread is nice too, as is chocolate spread and peanut butter if you don't have a nut problem.

Ok, I have mixed icing sugar with clover whipped it up and it came out fine, thank you so much. Only problem was there were a few toast crumbs in the clover , but she won't see them as they are in the middle. And I sieved some icing sugar over the top to mask the fact that the top was a bit pitted.

I may join the WI on the strength of this.....

yes glaze does go on top....
for oranges..
juice them and grate the zest..add some icing sugar (about 8 tbsp)2 and 2 tbsp butter and simmer until it looks 'right'..maybe adding a little water..
(i'm a fly by the seat..type of cook, so maybe someone else can help more..i.e give an actually recipe..lol!)

vanilla butter icing with rhubarb jam sounds yummy (get a really large dollop of butter and keep mixing in the icing sugar until creamy and sweet enough, a fw drops of vanilla essence to flavour. Spread jam on first and blob on the butter icing, swirl round with a knife and top with other half of your sponge.
A glaze is where the icing sugar is warmed enough to chemically change it into liquid sugar which forms the glaze IYSWIM. You can do this by heating your usual icing sugar and water/fruit juice over gentle heat and pouring over (pref warm) cake. It drys shiny and hard. lovely! could arrange clementines on the top and pour a little glaze over them. Or put the clmentines inside with the butter cream and save the clmentine juice to make the glaze with the icing sugar for the top??

Look on the side of y our packet of icing sugar for exact quantities to make butter icing and glaze etc - I always use these or do what the others do - make it up until it looks right!!
