Chicken fajitas

These seem to have become a staple when feeding other people's teenagers and ds1 is very enthusiastic when he returns from friend's where he's been given them but I don't really know what they are Blush

I know chicken & peppers with spices in a wrap but what spices? Is there a sauce? Can I have your best recipe please?

We've just had them for dinner! You cooked diced chicken, sliced onions, mushrooms, peppers (we also like baby corn, sliced lengthways) and then serve them with warmed tortilla wraps, sour cream, salsa and guacamole for people to make up their own fajitas. I don't put any spices on them as the salsa and guacamole are spicy enough, but you can buy mexican spice mix in the mexican/old el paso aisle.

I make them a lot. Mine are chicken strips soaked in lime juice with cumin, coriander, oregano. I do about two teaspoons of each.

Fry for ten minutes, adding red pepper, yellow pepper, red onion about halfway through.

Wrap in warm tortillas with salsa, guacamole, sour cream, lettuce, etc. Whatever you have really. We had them tonight actually, and I wrapped mine with lettuce, chopped cherry toms, chopped spring onion and plain yoghurt. No-one complained.

Mine don't like the El Paso mix and neither do I really. It is quite salty.

I mix the spices together myself - cumin paprika and chilli powder. Tastes fab.

We just had them tonight - I mix the chicken with spices in one bowl, peppers and onions in another. Stir fry the chicken first, tip into clean bowl then stir fry the veg, add chicken back in for a min at the end.

I serve with wraps, salsa, guacamole, Greek yoghurt or sour cream, grated cheese.

It's not an especially cheap meal though!

We love the kit mentioned above :) brilliant - and their burritos kit is great too.

The aldi version is very well thought of and half the price but ppersonally I think it's much spicier - nearly blew my head off! Dh prefers it though.

The Old El Paso crispy chicken fajitas are great (especially now they've started selling the crispy coating stuff on its own - the tortillas in the kits are too small). The tacos are also good, and I'd get a kit for those.

Otherwise, I have a nice recipe for a fajita marinade that works well with chicken or steak. The ingredients are malt vinegar, cumin, coriander, oregano, a green chilli, salt, pepper and beer.

we use the Discovery fajita spices (much nicer than old el paso!). Sliced chicken, sliced bell peppers, sliced onions (1 red, 1 brown). Serve with warmed tortillas and dips e.g. salsa, guacamole, sour cream.

I use oregano, hot smoked paprika, salt and a squeeze of lime juice for the spices.

My DC aren't fans. Sad Which is weird as they are otherwise adventurous eaters but never been keen on Mexican. Sometimes I make them for DH and I as we love them. My recipe is a GH one from the 90s!

Marinade cut up chicken breasts, onion quarters and chunks of orange,yellow and red pepper in a mix of lime zest, lime juice, fresh chopped coriander, crushed garlic, olive oil, salt, finely chopped chilli. Fridge it for a few hours, then fry over a medium high heat. Serve w tortillas, guacamole, salsa, grated cheese, sour cream, extra chilli etc.

We're fans - just need cumin, coriander and oregano as the basic mix and then add chillies - chipotles if you have them and a squeeze of lime juice when cooked.

Had the Old El Paso crispy chicken mix the other day (Sainsbury's didn't have the usual BBQ one I ordered)

It was lovely and made a nice change, although I found the coating to be a little bit spicier than the BBQ one. I only ever buy the packet of spice, and buy supermarket-own brand fajitas because it's cheaper than buying the kits.

I've made my own spice mix a few times before but it never tastes as nice as the Old El Paso stuff.

We've done a homemade crispy oven one a couple of times. We blitz the bread with chilli flakes, smoked paprika and garlic, dip the chicken in egg and coat in the breadcrumbs.

We've got fajitas tonight. I prefer the El Paso to the Discovery mix but only usually use half a packet.

Unfortunately I'm the only one that really likes them in our house - DD loves chicken wraps but without the spices, onions & pepper and pita DH doesn't consider them to be a proper meal Hmm .
