Going shopping feeling like a fat cow help me get some ingredients for healthy meals!

Im feeling like a total bloater at the moment, shopping day has rolled round again! Can anyone help me think of some healthy meals for lunch and dinner for us, must be suitable for DS (22 months) i always end up living off chicken breast and salad when i try to eat healthy then i get bored and reach for the choccy!

Im gonna buy a ton of fruit to snack on as i love to snack and DS loves fruit.

What shall i put on my shopping list?

Sweet treats I like are: juicy prunes. Not the horrible dried up ones but the nice moist ones. They are so sweet, they really feel like a treat. Dried mango is delicious too.
Currently eating big bowls of chopped strawberries, blueberries with cinnamon sprinkled on top plus greek yoghurt stirred in. Very filling & really healthy.
Do you like mackerel, that is a good alternative to chicken & very healthy.
How about advocado, mozzarella & tomato salad. That is yummy & very filling. My kids like Mozzarella & advocado - not too keen on tomatoes though.
I do lots of stuff with rice. Fry some chicken/beef or pork & some vegetables in olive oil & then stir it into boiled rice. Really filling & low calorie.
Flapjacks are better than cakes to munch on if you get the nibbles.
Other good nibbley things are seed mixes: pumpkin, sunflower etc. They are quite fiddley to eat & are full of really good oils & vitamins.

I think it is best not to be too punitive. If you say the word diet to me, I just want to go out & cram chocolate in my face. I just try to adjust what I already have to make it less fattening & more healthy.

buy pizza bases and top with tomato puree ,courgettes,peppers,red onions,sweetcorn,mushrooms.

couscous with lots of roasted veg
pasta with just olive oil/lemon juice (instead of sauces) and then lots of roasted veg/leftover meat or fish
soups with noodles (tom yum paste, which I get from waitrose is v good base - just add water/stock, then onions/carrots/courgettes/shredded chicken/ginger/garlic/mushrooms and a squirt of lime and dash of fish sauce at the end, plus beansprouts if you have any)

Quorn is very low fat ,i make curries with it,shepherds pie etc.
Im off shopping too in a bit oh i really hate it,race round 12 different shops to get the food that we want with moaning 4year old in tow,stand for 30ins to pay,get stuck in traffic on way back ,try to unpack whilst preparing this evening's tea .............AAAAAAAAAAAAAAAAAAAAAAAAAAAHHHHHHHHHHHHHHH

oh and those flatbread/tortilla things - good with stir fried everything in them and children like making them
